Whatever you do do not use pure raw unrefined sugar it will not mix w the butter it turns out like a soft ice cream topping w butter all around the edges and on top.it will not work I used a candy thermometer but RAW sugar has to be cooked longer so the temp gets higher I recooked mine it didn't have the nuts yet but did have the chocolate in it I don't know if it worked or not but after it cools I will let you know what happened right now I'm going to the store to get some regular table sugar and more butter while that cools I want my almond roca to be good and this is the best recipe I have found on TH-cam it is delicious and always turns out unless you use raw sugar it will not work trial and error and I didn't realize it until I was cooking it down and it dawned on me it had to be the raw sugar and it was good luck this is an excellent recipe that never fails you and it's even better then store bought.😅

Just made this candy. Just waiting for it to cool down and set up, so I can taste it. Very easy to make and will probably be making it many more times before the first of the year. Thanks for a great video showing the process! One thing I experienced when cooling it down in the fridge.... Leave it in longer than you think is needed. The toffee will set up in about 10 minutes and can be broken easily... BUT the chocolate will take a lot longer to set up... PS by "Gooey Fingers" LOL

I do the same procedure, except I use whole graham cracker squares to line the pan first, then the caramel, bake for 6-7 mins at 350, put chocolate on top, and spread when melted. Sprinkle with pecans or almonds. Line the baking pan with foil and use cooking spray.

Both of my batches today separated horribly today ~~ I didn't change my process but it got way to hot to fast I think? What are your thoughts on what I did wrong?
