Hi Aej, I baked at 400F. The topping itself is not crispy but rather creamy and mouthwatering. Though you can add extra masago as garnishment on top of the topping to have the crispiness when biting.

Any alternative for scallop?
You can skip the scallop and replace by equal amount of shrimp, the scallop does kick a little bit robust though

What mayo you use? Kewpie japanese mayo ?
I used Kewpie, but regular Mayo works fine, you just squeeze some lemon juice and a couple grains of salt into it.
