Mac's self-esteem issues are a constant throughout the show, and "ripped mac" not getting the acknowledgement for his improvement not only fits that theme (the gang justifiedly explains he's just doing it for attention and that he should be ignored like a child), it's also tragic comedy.
Frank also did this, if you notice when he starts off in season 2 his hair is clean cut and short, and as the show progresses and he spends more time with the gang and becomes crazier and crazier his hair grows ridiculously long.

Also, I've noticed that the first season or two of _The Office_ is kinda grimy and grainy looking, with harsh lighting, and some of the actors look blotchy, but with success came a bigger budget and HD, so it stopped looking like a gloomy paper company where you'd never-ever want to work, and became a "nice" place for the characters to be, totally dulling the show's edges. When a show works from the start, they should stick with what works!

It's not a good thing either. I'm incredibly skinny, and it doesn't help that I'm also quite small haha.

I think it was season 6 he was really fat. its really noticeable because season 6 ends on a very specific scene and season 7 picks up at the same exact scene (characters in same room, same clothes), except he'd lost like 50 pounds

He's talking specifically about The Big Bang Theory (he mentioned it in a couple other interviews), but he's also saying that having the characters get better looking is the norm for most shows. So yes, The Office is no exception.
