  • Friends, it's that time of the year. 😊
    Christmas and New Year are a time for sharing, smiles and delicious food. This will be the last video on the channel for 2022 and I hope you enjoy it. The Big Christmas Splash is all about being together with our closest friends and enjoying the delicious food. I hope that the recipes and ideas for the holiday table that we give in the video will provoke you to cook something delicious for the holidays.

    THE RECIPES:
    Marooned cow cheese:
    Cow cheese marinated in oil with garlic, pepperoncino, smoked red pepper and thyme.
    Garlic Oil:
    150 g soft butter
    ½ head of black garlic
    Salt and pepper
    Method:
    Everything is ground in a blender, wrapped in baking paper and stored in the refrigerator to harden.
    Pork breast roll (Porchetta):
    2 kg boneless pork breast
    4-5 sprigs of rosemary
    4 cloves of garlic
    1 tsp fennel seeds
    2 tsp smoked red pepper
    60 ml extra virgin olive oil
    The peel of 1 lemon
    Salt and pepper
    Method:
    Chop rosemary and mix it with garlic paste, crushed cloves, smoked paprika, salt, pepper, lemon zest and olive oil.
    Shape the meat and cut off the excess. Make shallow slits on the inside of the piece of meat. Coat it well with the marinade. Roll up and tie tightly. If desired, spread it on top. Put it in the fridge for 2 hours.
    Bake the meat initially in a highly heated oven at 220 degrees until it gets a crust (in our case for about 20 minutes), then reduce the temperature to 160 degrees and bake for another 2 hours.
    The baking time depends on the size of the piece of meat and the oven. Check it out!
    Remove from the oven and remove the string. Wait a minimum of 5 minutes before cutting.
    Serve with side dish of your choice. We made a "country mash" or mash that has little lumps of potatoes in it. Garnished with black truffle and truffle oil.
