I love that we see the sous chef helping where he can. Chefs and sous chefs are really one of the last "master and apprentice" rolls that used to be more prevalent in day to day society. It's great to see someone eager to learn helping where they can.

your not wrong proffessional kitchen tend to use high amounts of fat and salt. we used to make this mashed potato that was amazing that was 40% butter by weight
So to make ponzu sauce, you can mix 60% orange juice, 30% regular soy sauce, 10% fish sauce, optionally vinegar to taste. Sounds legit, need to test this soon!
Looking by the shape, seem like those knives are only for showing. Cheap knives kinda thing. Thats why he braves enough to chopped the egg with it on top of the metal grill. Hell no way he uses the knife he used to fillet the fish. Or sashimi knife.

What an amazing gentleman. It's a really nice perspective on Japanese cuisine. Coming from Portugal, where fish as a big role on our diets like in Japan, I can appreciate the fact that he uses all the fish, no waste. We do the same... mostly!

That soup reminds me of the one my tatay usually makes from leftover grilled catfish. The charred taste of the fish really gives kick to the vegetable soup, which all ingredients usually came from our back yard 😁
I remembered when Anthony Bourdain met Masa along with his family and friends in Japan. He's such a great guy and one hell of a talented chef. I would love to meet him one day and get to try his food.
