The thing with “breaking the rules” is understanding the reasoning behind a particular rule and then deciding if the risk is worth it or not to you and your family. Everyone’s risk tolerance is different and the canning community is a great example of that.

Good morning 🙏😊 I just made my tomato sauce this weekend and have a funny story…. My blender broke and my spare went to college with my granddaughter so I thought, “no big deal, I’ll use my food processor “, ( I’ve not had it too long). Guess what?! I had tomato sauce all over my kitchen counter! Who knew that liquids don’t do well in a food processor??!! 😂 I’ve learned my lesson and now will be getting a new blender. But this batch of sauce is a bit chunky. Have a blessed week 🙏

An option to grinding up the skins and seeds in your sauce is to strain them out with a food mill and then freeze dry the skins and seeds to be ground into a powder. Love your channel. Lots of useful knowledge.

Check for heat diffuser stainless steel plates so you can use your thinner bottomed pots!! This thing saved me when doing bone broth! You just put the thing on your burner and then your pot on that

Hi Sara, for the past 50 years I keep a cast iron diffuser on my stove top burner. (Made in Italy and on Amazon) this helps all pots from burning when simmering for long periods of time. Now tell us where you get all your energy from!
I didn't plant tomatoes this year, but I found a basket full of volunteers night before last hiding in some tall grass. I made sauce and it was GOOD. I enjoyed your video.
When I remove jars from a canner, I always set them on a towel like you do, but then I cover them with another towel so they cool slower. I've never had a jar break doing it that way. They also always seal for me. Another interesting video, thank you.

Glad to hear your using your vita-mi. For years I did the food mill, attachment for my kitchen aid mixer to remove the seeds and skin. It was my daughter that said mom just throw everything in the vita-mix it purées you won’t see any skins or seeds. I pass this on to all my friends that did the old method.

Great video, Sarah! I didn't make pizza sauce, but I did make 21 quarts of spaghetti sauce. Spaghetti is on the menu for tonight! Also, my husband loves salsa on his scrambled eggs. I was determined to not buy any salsa this year, so I planted a lot more Amish Paste tomatoes...they did great...and I canned 67 pints of salsa! 😁 The plan is working so far! Be blessed! ❤

Awesome! I've been using up my Juliet tomatoes to make a roasted tomato soup base. Later, all I have to do is add some chicken broth and some cream. Perfect for when the snow is flying outside my window.

I love tomatoes, particularly marinara. I Must Remove skin and seeds, because if I don't I get joint pain and psoriasis every time. I love your videos and you Are the ketchup Queen 😂
I use the solid insert that came with my water bath canner. It has several holes in it. I just assumed it made the heat distribute more evenly. I've had it for over 25 years and still looks almost new thanks to vinegar! I'm not the canning police. Definitely not an expert but I have been around for awhile and remember someone died from botulism when I was a kid. So everyone needs to check that the seal is properly seated. Whatever method you decide on, follow the instructions exactly and you should be okay 😊 The Vitamix really smoothed the skins and seeds up nicely. I've found I can eat raw tomatoes if I remove most of the skin. Once they're cooked I don't have any issues with them. Your milk shower must have been great for the tomatoes, they look wonderful. Great editing! I had to rewind because all of a sudden Sarah's outfit changed and she was in your old house 😂 I watched several reruns that popped up this weekend so you must have shaken up the algorithm going through older videos? How is the cheese making going?

Like you, I make tomato sauce or soup using the whole tomato with onions, garlic etc and then use the Vitamix. I’ve never had a problem. So far I’ve bottled them but I’m considering freezing some next time.

For years I have canned tomato sauce. Not once did I peel or seed my tomatoes. I cut them up and cooked them down. After cooking, I run the "sauce" through a sieve and then return it to the cooking pot to thicken.
OMG! I literally just clicked off your video" Roasted Cherry Tomato Pizza Sauce" from last year. I made it last year and it was so good. I wanted to remind myself of the steps to do and my tray full of cherry tomatoes is in the oven now. Then I sit down and go to see what is new in my notifications and here you are making pizza sauce from regular tomatoes!! OK, now that the shock has worn off, I'll watch your new video,lol. It's gonna be hard to top last years recipe!!

Sarah, enjoyed your video. I stopped canning tomatoes due to all the work steaming, removing skins & seeds, etc; love your excelarated method! Is it necessary to have a "canning pot, or will any pot work?
@@susanmullenix9341Any pot that is deep enough to allow the jars to be covered by 1-2 inches of water will work for water bath canning. For the bottom of the pot, if you don’t have a rack, you can use twist ties to wire together jar rings to create a riser. I have an electric stove and would not attempt to water bath can anything with the jars sitting directly on the bottom of the pot.

Do not leave the skin on please. It is not safe.
Another advantage of cooking down tomatoes with skins on, is the pectin in those skins. Helps to thicken your sauces❤

I like to use my food processor but with semi-liquids, I only fill it half way. It takes longer, but no extra cleaning.

I use my 22qt Nesco roaster. So easy.
For years I have canned tomato sauce. Not once did I peel or seed my tomatoes. I cut them up and cooked them down. After cooking, I run the "sauce" through a sieve and then return it to the cooking pot to thicken.
