Operation: Homemade Baked Beans

  • An adventure in beans and tomato sauce brings me to this project. Attempting to make homemade Heinz style baked beans. UK style beans are different to others in some Countries, perhaps a little less sweet / smokey in some ways - stored in a tomato sauce with a mild sweet kick they are the ultimate comfort food! This was a recipe to make UK style ones from home and I picked up some cool tips along the way, i'm not sure if i'd do it again but it was really fun to make my own, they were fresher and tasted identical!     Ingredients list (adjusted after making video with hints):
    500g dried haricot beans (other white beans are ok, like cannellini)
    500ml chicken stock
    225ml tap water
    1tsp Worcestershire sauce
    6tbsp ketchup (ideally Heinz)
    1.5tbsp dark brown sugar
    2tbsp tomato puree
    1tbsp apple cider vinegar
    1tsp garlic powder (or more onion powder)
    1tsp onion powder (or more garlic powder)
    2tsp salt
    Pinch pepper
    12tsp cornflour mixed with 100ml water

    just a helpful hint. if you soak the dried beans overnight and then slowly simmer them in the sauce(without the corn starch), the beans will take on more of the sauce flavor and the starch from the beans will thicken the sauce

    Nah... you're wrong on the ingredients, there is no need for that much... just soak the beans overnight, boil them with the tomato sauce added and after that you just reduce the sauce & water mixture by frying them a little in a pan with a hint of oil. That simple !

    To be the same as canned beans you'd need to use Haricot Beans, also known as Navy Beans. I worked for 20+ years for a food canning company. Dried beans were always presoaked with calcium chloride IIRC as this would help keep the skins firm. The beans should increase in size around 15-20% due to an uptake OK the soaking solution. It's very much the sauce that adds the flavour though these days. The formula for it has changed a lot over the last 40 years. Up until the early 1990s lots of different spices would be used. Since then though these have been scaled back and replaced with sugar and salt. Any time on food you see wording like 'improved recipe' it is really code for cheapened recipe.

    I am so very sorry to hear about Amy. Pugs are an unique breed of dogs. Mine is stubborn and determined. If she decides to do something, there is no stopping her. I know y’all will miss her terribly!

    Personally, I'm a ranch beans guy. Especially cause here in the US baked beans are way too sweet for my tastes.

    I feel that it's worth mentioning that the soaking you do to dried beans at home isn't just to soften them, it's to remove toxic compounds like alkaloids and lectins which can be truly dangerous in the amounts found in some beans. You'll want to actually switch out the water to get rid of them, since cooking with heat can destroy the same compounds but isn't as effective as simply removing them with the water. Even 2-3 improperly soaked kidney beans that haven't been cooked enough can make an adult human really sick. If you find that beans make you really gassy, this might actually be because you are extra sensitive to alkaloids and extra soakings of dried beans can help. Most people who have only ever eaten beans from a can wouldn't typically know these things, but it is important, because some beans are very dangerous and even lethal when improperly prepared, like lupinis. a quick google can generally tell you how long each type of bean needs to be soaked, but I have noticed most dried bean packages make no mention of this.

    Can't beat baked beans on toast. An everyday breakfast, snack, tea... where I live now, it's a luxury food. Dear Barry, this is before your time, but if you know about Punk music in the UK, then please bear with me. There was a band called The Dammed, one of the members called himself Captain Sensible (ironically). He also promoted vegetarianism. He had a recipe for home made baked beans that used apple juice instead of sugar to add sweetness. I made it once and I've been trying to find this recipe again, for the last 30 years, so your mission, should you accept... PS keep up the good work.

    I once visited a café and a fellow customer asked the server in a very posh voice “beans upon toast, please” like it was a delicacy lol 😂

    I ate baked beans first in the UK and it took me some time to become a fan. Now I find the idea of creating my own sauce and play with different beans/pulses appealing. Thank you Mr B for inspiring me.

    Traditionally baked beans are usually haricot(navy) beans in the UK.

    If you use a pressure cooker, like the instapot, or something like that, you can fully cooked beans in less then an hour with no soaking. My wife makes beans all the time like this. Works great!

    I love how this is coming out after I finally found baked beans in my country after a month of looking for it after coming back from the UK. They are really a thing of dreams.

    Found this recipe about 8 months ago and wanted to try it before my trip to London. After my trip and having tried lots of different beans I was also able to find the Heinz beans here in the States. This Recipe is my favorite.
