Something about island rain is quite special indeed... this was quite wet. Took a few days to dry out haha but still a cozy holiday for J&G and my Mum!!

Wish I had that lemon grass. My courtyard is too small but it's encouraging me to plant at least one plant somewhere. I use lemongrass in Indonesian/Malaysian curries. Just smash it slightly with the back of the cleaver, then pop it in the curry. Remove at the end of cooking (like a bayleaf). I use it in Thai cooking too. Such a lovely flavour. 🙂
mmm yes!!! Good ideas... I have since made a lemongrass simple syrup to jazz up some of our resort cocktails and made a lemongrass coconut panna cotta which was next level delicious!!! But I love these dinner applications too I am 100% going to be using more of it! It is growing so wildly!
The cracker recipe is great! I tried it today (with seeds) and it was amazing. So more-ish!! I then tried a gluten-free version for a friend and it worked out well. It was a little more fragile than regular flour but not that difficult. It was a bit paler too, so I will work on the GF version to perfect it. Thanks so much for sharing, Katie. 🫶🏻.

I have made the exact recipe with GF flour only roll it out on baking paper you plan to cook on as it breaks apart... crackers come out pale so adding herbs or seeds helps make them look as delicious as the gluten-full variety!!

I’ve also tried your white fish recipe, the one where it’s wrapped in baking parchment etc. That's a favourite now though I wish the fish was as fresh out of the ocean as yours! And I’m definitely going to try those ginger muffins you did a few episodes ago. I’d never bought coconut syrup before but found some locally. However, I’ve just started a few weeks of reducing my sugar intake (post-Christmas belt-tightening LOL) so I’m going to leave the trying of that recipe for next month! Looking forward to it! 😋
