I'll answer as if I owned your truck. I would remove the old and bring in the new as Long as it has a nice base to attach it to. Being plywood or something similar
Hey Frank your videos are great, i recently purchased a 30ft school bus im turning into a food truck, i have 20’ length by 7’ width. My question, is it necessary to put the plywood behind the stainless steel? Can i just do studs?

Hey Frank! Your series is awesome man. It's helped me so much. When you connected the stainless steel sheets up in the front of the trailer by the sink did you use 90 degree stainless steel connection pieces? Or did you just use the stainless steel end caps from Amazon? Thanks

I am new to this, but can an aluminum sheet metal or other sheet metal be used rather the steel? What would the benefit of having the steel sheet vs other metal sheets?
other metals tend to stain, rust and/or oxidize in a kitchen setting. Stainless steel eliminates all of the issues AND it is more durable than most other metals in this application. Also, your health department most likely will require stainless steel or something like FRP paneling for water resistancy and avoiding mildew
