For eggs in countries where eggs are *not* washed then keeping them on the counter is fine since there's a natural coating that keeps them from going off. In places like the US and Canada our eggs are washed before they arrive in grocery stores and we need to keep them in the fridge. In culinary school in Canada we were taught that one day on the counter is equivalent to one week on the fridge for Canadian eggs.

I think Catherine is talking about Mother India on Infirmary street? The downhill street from across old college/chambers st that leads to cowgate. I love it there. Rankeillor street is residential.

I hope Helen dresses as a maiden from a Renaissance Fair for the joust gig. Go Helen!

The boiled egg debate. I thought last week that Helen is adding kettle boiled water that is not actively boiled. Catherine has bubbly boiling water then adds eggs. Please confirm 😝

Helen if you want inspiration for your making your set more medieval I HIGHLY recommend How To Behave Badly In Renaissance Britain by Ruth Goodman. It's an absolutely brilliant book and audiobook full of insults, legal battles, language usage and expected etiquette in all realms of human behaviour.
It's funny and fascinating and definitely a compliment to the festival!

Re the gender split in booking Edinburgh shows.
Apologies to anyone who identifies as non-binary I didn't pick up on.
I watched 44 shows in my 5.5 days at Edinburgh. My split was roughly 40% male, 60% female.
Would have been closer to 50/50, but Abi Clarke and Sophie Duker organised some extra gigs.

Catherine have you looked into yeast intolerance?....reducing yeast (I'd had already cut out dairy and gluten) was missing key for me, made huge difference

Well after seeing my Dad die in agony of lung cancer over the course of 6 months, whilst I would like it if Helen gave up, it's ultimately her choice. And sometimes you've got to pick your battles. Trying to change too many things at once can lead to not achieving anything.
Besides, all the cool people smoke or vape...
