He didn't despise living creatures for their organism formation, but for their limited abilities and capacity. He wanted to feel things while being superior as the Avatar. Let's admit Ondai ability and knowledge surpass most living creatures.

I love how the Avatar one rule, no killing, is being broken by the racers. It’s subtly tells us how weak Satis is and how he can’t hold them accountable anymore. It’s taking all he has to just hold cannelletto at bay.
