    I followed you 3 years ago. Learned how to make wine :) my friends and neighbors loved it. Only they would fall asleep in my home. Due, to corona I can’t get fruit so I said let me get rice wine so here I am again :)

    In central China and Japan, people also make rice wine. We add a lot of jasmine flour cured in honey. We collect fresh jasmine and add them in honey for months until they are totally mixed. Then, mixing with the rice wine before fermentation (or after fermentation, I am not sure). It gives you a fantastic taste.

    OK we made this about 6 months ago and put the bottles in the fridge. We did not use sugar. We soaked glutinous rice over night and steamed the next day after it cooled I put the yeast balls, after about one week I added 1.5 liter of water for every kilo of rice .after about 40days I strained the rice and squeezed all the liquid from the rice with a cloth. From 3 kilo of rice I got 8liter of wine. As I said before we put the bottles in the fridge. Now 6 months later we tested the taste. IT IS SPECTACULAR!!! perfect for celebrating the New Year! Happy New Year thank you!

      ​@@Spectacular-cuoredicioccolato Once I made sugarcane wine.After bottling, there was a blackish layer on the top side of wine. I think that was due to oxidation. My question is that how to avoid this as it affects the taste of wine too??

      The formula for determining alcohol by volume percentage by Specific Gravity units is OG (original gravity) - FG (FG) X 131.25. In this instance, 1.125-1.052 = 0.073 X 131.25 translates into an ABV of 9.58%.

      This isn't real saki. He real.japanese rice wine doesn't have or has a special yeast added . This is simply using yeast to turn rice starches to alcolhol using yeast And there's alot better tasting sugars to ferment than rice sugars . The rice is used for the yeast and the sugars in real saki

Saki is higher alcolhol than the slop you made in the video . What youre making is sugar wash basically and I don't think I was talking to you at all brah .     Quick question, when you put the wine in a glass bottle, do you have to keep releasing the CO2 pressure buildup?

      I made rice wine in last month... But used baking yeast instead of wine yeast. Is there any chance that methanol will be created in wine because of baking yeast? Will it be safe after 1.5 month to drink?

      You have a point there regarding quantity. However, if you multiply everything X5 you should be able to get everyone in your family _quite_ happy. I am starting small, more or less like Quore suggests, and them I am sure I will be making more. Cheers!

    Hi cuoredicioccolato! I plan to make about 4L of water. So if I follow your recipe does it mean that I should use 1kg of rice and 2kg of sugar? Won't it be too much sugar for 4? Also, did you use sticky glutinous rice or just an ordinary rice?

      Comparing the density before and after fermentation gives you an idea of the alcohol percentage.

      No risk, this fermentation produces ethanol, CO2 and that's about it. Only risk is, if you don't do it right, you may get a horrible wine that will go down the drain.

    You can make sparkling wine from your homemade wine by adding a little sugar in the bottle before filling. Homemade beer makers sometimes use this technique to naturally carbonize their homemade beer. Then store/wait six weeks before serving. Research the correct amount of sugar to add, else your bottle could become over-carbonated and explode. If doing this method there will be residue yeast at the bottom of the bottle after six weeks. So pour carefully, and try to use smaller bottles like a beer bottle and share your wine. This method will not work using store-bought wine, cause there is usually no remaining yeast in a bottle of commercial store-bought wine.

    Hi, probably a silly question... Did you use a simple bread/brewing yeast versus a koji/saki yeast? (Can't get them where I live). I am new to brewing with rice and I am not sure if "normal" brewing yeast actually can eat/break down the complex sugars in rice. Any comments would really be helpful. Thanks.

      Like you wrote normal yeast can't break the sugar of the rice, but in this recipe will break the sugar that you add.

      This method is a bit of "cheating". Traditionally you want yeast koji mold (Chinese yeast balls can be found on ebay, they are a ready mix) that breaks the rice down into fermentable sugars and ferment that into alcohol. In a method that is used in this video you do not ferment the rice sugars but normal sugar that any yeast can ferment, though it is better to use brewing yeast instead of baking yeast for flavor and clarity reasons. Anyway the rice is just there to add flavor and body. It won't be the same as traditional rice wine or sake but it is still technically a rice wine.

    Hi, firstly thanks for this easy receipt, i'd like to ask 2 questions.
    First is i can see just 1 litre water in ingredients so that in the end we'll have only 1 litre wine ? I m asking because there are 3 bottles at the end of video making much more than 1 liter. To make 4 litres should we multiply the ingredients x 4, i mean 1 kg rice, 4 litres water, 1 kg sugar etc.
    Second question is , some cider-makers drop hops in fermantater during fermantation or after fermantion completed and let them in for a few days more (dry hopping ), can we do similiar with this product ? maybe we can get something like beer with hopping and one or two sugar while bottleing.

      1) yes you have to multiply
      2) with the hops could be a rice beer, but I can't guarantee for the taste 😁

      I certainly wouldnt recommend adding hops. You can add a little rice to barley malt to make beer but all rice will not make a tastey beer.
      You can also make a good rice wine with rice and white grape juice.

      I enjoyed a lot during the lockdown making crazy strong wines while others around me were craving for whisky and beer and buying them in black from the milkman. It just cost me the price of 200gm sugar and two handfuls of rice to make a bottle of wine. 😂😂😂

    I doubled the recipe and it has one more week to ferment until bottling. Cant wait to see how it turns out. I’ve made traditional Korean rice wine but it’s a little funky and sour for me. Hope this recipe turns out better. Thanks!

      More sugar = more alcohol, but be careful not exaggerate

      A) Put the endproduct in the freezer (plastic bottle) and if it is frozen, release the cap and let half of that bottle drip in a bowl. Alcohol has much llower freezingpoint than water so you now what first comes out of the bottle ain't water.

      @@koelling No since a freezer has a limit, I guess it wouldn't be pure alcohol. But 40% alcohol is not a problem.

    Very nice video. Did you boil the rice after you add the sugar? Or you add the rice and turn off the heat and wait for 10 hours? Thank you for interesting projects.

    Which yeast should be used. Because when i had make ginger beer with local yeast available, after fermentation it smells stinky in nose. So is there any specific yeast i should use or any yeast will work? I loved ur toutrials. Thanx

      Yes you can use sugar from malt or from fruit

    Generally with all the fruit wines @cuoredicioccolato says that we should shake the fermenter daily so that the fruits floating immerse into the liquid. I just want to confirm if this has to be done in rice wine also ?

    Love to use rice wine or sake for cooking all kinds of dishes..... it's great on marinated chicken or any fowl really ....... but a shot or two is great as well and even add a shot to a hug jug of Mexican HORCHATA " RICE AND CINNIMON DRINK " ITS REALLY GOOD .

    Hello, I have few ques. to ask-
    1. What should be the ambient conditions be like? Temp. should be in range 25-30 C but should the room be dark? Will it affect fermentation process?
    And what about moisture in air?
    2. I saw some YT videos where people gave the wine bottle a sort of thermal shock after all the process ended. Dipping in hot boiling water or storing in refrigerator to kill or stop yeast process? Should we do this too here?
    3. I'll have to order bubbler, so that may take some time. Can I use a tube out of flask to run to jar of water to act as bubbler?
    I know you may be busy, but any answer however short will help.

      1) 25 C It will be perfect, you can store in dark please if you have it
      2) not necessary if you follow the video 😉
