INGREDIENTS AND METHODS
Welcome to my channel!
Cook Bake Munch
Sultan's Hat With Turkish Brioche
Lukewarm Milk (1/2 cup or 125 ml)
Lukewarm Water (1/2 cup or 125 ml)
Sugar (1/4 cup or 50 g)
Dried Active Yeast (2 1/4 tsp or 7 g)
Mix well
Leave it for 5 minutes
Oil (1/4 cup 60 ml)
Lemon Juice (1 tbsp)
(can be replaced with Vinegar)
Egg White (1)
Reserve yolk for brushing
Vanilla essence (1 tsp or 5 ml)
Combine well
Plain Flour (3 cups or 360 g) + Salt (1/2 tsp 3 g)
Add gradually
Knead the dough
Divide the dough into two equal halves
Add 1 tbsp (14 g) of butter in half of the dough
Knead for at least 5 minutes
Cover
Leave it to prove until double in size
(at least for an hour)
In the second half of the dough
Add...
Cocoa powder (2 tbsp or 15 g)
Butter (1 tbsp or 14 g)
Milk for kneading (2-3 tbsp)
Knead for at least 5 minutes
Cover
Leave it to prove until double in size
(at least for an hour)
After 1 hour...
Place the dough on the sheet of paper
Roll out into a rectangle
(as shown in video)
Set aside
Roll out the other half of the dough in the same way
Place the other rolled half over it
Spread 2-3 tbsp of chocolate spread on one side of the dough
You can add any filling of your choice (such as nuts or raisins)
I have added dark chocolate (~75-80 g)
Make cuts (sections) on the other side of the dough
(as shown in video)
Close the filling well
Twist each section as shown in video
Fold the dough as shown in video
Place the dough into a lined and greased baking tin
Cover
Leave it to prove until double in size
(at least for half an hour)
In Egg yolk
Add...
Milk (1 tbsp)
Vanilla essence (1/2 tsp)
Mix well
Apply egg yolk mixture over the proved dough
Bake in a preheated oven at 180C/350F/Gas mark 4 for 35-40 minutes
Here it is nicely BAKED!
Apply some butter while hot
Cover
Leave to cool down
(at least for 15-20 minutes)
After 20 minutes...
Take it out of the pan
Sultan's Hat
