Very nice, I process 1lb of cloves at a time and Instead of Dichloromethane I use Ether.
ether is probably better but we use dichloromethane for the convenience of which layer is organic in the workup

Which solvent we can use if want to use clove oil for oral use can you mention some safe options plz
After steam distillation , why we didn't evaporate the water directly at 100c ?
to avoid the decomposition of the thermolabile compounds in the essential oils i think.
Water solvent not quantitative ... why not use water to rinse clove residue into distillation chamber, to maintain quantity of clove?
Could you still get the extract even if I don't have any dichloromethane or magnesium sulfate?
you need an organic solvent of some sort to extract the extract from the water.

It works fine without solvents, eugenol is denser than water, so it phase separates below the water. you can directly remove it with a pipette. The yield suffers, though, you lose a lot, stuck as tiny suspended droplets, hence why organic solvent extraction is more efficient.

why dichloromethane
There's better solvents but we use dichloromethane because it's easier for students to work with if it's the bottom layer in the sep funnel.
