Great fixin's! Bit twitchy about sirloin though, having been out for a couple of disappointing gourmet sirloin burgers in my time, and my own burgers working so much better with 20% fat beef mince than with 10% steak mince. Maybe I'm not doing it right? Maybe it's just a matter of taste...

For me sirloin has a great flavour, quite a lot of people over cook it and it becomes dry
+stevescooking at the moment I'm about 3 min per side for a 6oz patty. I'll cut it to 2 plus a rest, and see what happens with sirloin. :)
