  • a day in the life at my home bakery in montreal. We take the scooter to the atwater market to pick-up some fresh food then home to recipe test some vegan vintage jelly molds and strawberry-rhubrab jam for cakes. A bit long and different but a look into my bakery process.

    i did basically this same *gestures to entire video* thing the other night, combining some fruits and stuff i had in the house to make some little jellies, and learned so many things from my first foray! i was also using agar instead of gelatin, though mine was a premade unflavoured rau câu mix, just agar and sugar, and following the liquid ratio on the package mine was also too firm. i imagine you know exactly what i mean lol not unpleasant at all, but just not as jiggly as we're used to jello being. i really had to fight to keep anything on my spoon lmao they were so firm and brittle that eating with a fork would have been much easier. to get them out i also thought about the warm water bath thing but like you, found that sheer force and slamming them down did the trick way better, plus no meltage from the warm water so my mold lines were ✨CRISP.✨ i also could kind of just use my fingers to peel the jelly away from the sides and then stab into the bottom with a knife to flick them out (small molds, like golf ball size). i used the remainder of a can of coconut milk i had lying around, but more water than that, next time i will definitely try almost all coconut milk since like you said, mine also could have just been "more," i think the water might make it a little bland.
    i couldnt believe how quick my little jelly experiments came together (i wasnt making jam or anything like you did here, just using stuff i had) and my mind is seriously racing thinking about the possibilities lol. i dont think i'll be visiting anyone any time soon without bringing some little jelly thing with me lmao. i also wondered about the enzyme + agar thing, and ive just bought a pineapple so i'll have to test that. i think from a quick google its looking good, which is amazing bc i love both pineapple and kiwi, the two that you cant put in jello.
    i remembered that you made this video as soon as i was done, so i had to come here to be like omg what did lauren make 👀 i live and breathe just in order to enjoy rhubarb, so as soon as i get my hands on some i will have to make rhubarb jelly.
