Good afternoon, I never eaten pepper pot because, I thought it was made only of meat. I am pretty sure that Pepper Pot is an Amerindian dish popular in Guyana, reserved for special occasions only. The Indigenous people did not have access to meat, so their pepper pot was made of Fish, and it was called Tuma Pot. The pepper pot from the meat era came from "town people". The indigenous people created a liquid call Kadkura sauce which we now call Casaripe or Cassareep is the fundamental to the pepper pot recipe. Good job. Enjoy your festive season.

how long does it take to cook?
