I'm type 2 diabetic and I have to keep my carbs around 45 g per serving or less... and I like to eat so I have to get creative! Could you do a lower carb budget meal video with approximately the same budget?
Thank you. Instead of continuing to focus on cheaper meals. You have great content, so I beg of you, would you please work on making your videos a LOT shorter? So we can get through them and all the other videos we watch, faster? 3 meals in a video should only take 1 - 2 minutes, 5 minutes max. Please try to make a video with as few words as possible. There are other cooking video makers that show recipes much faster. They just quickly show a photo of each step, with the ingredients they just added, typed on the screen, with the price typed on the screen. Tip 1: Never stand in front of the camera. Ever. The biggest time saver. Just show the food. 2. Write a script and read it. One typed page = 3 minutes to read aloud. 3. We don't need to watch you mixing and chopping. 4. We don't need to hear endlessly about the serving sizes. 6 slices? 8 slices? 6 slices? 8 slices? Who cares! Say it once and please and move on. That's why reading from a script is so important. Thank you for your info and recipes! Great ideas!
I love the total for the week, especially total for a week for 2 people type extreme budgets. Maybe $15 for the week for the two of you. With a realistic element. Pancake bake with drizzled melty peanut butter would be amazing.
We are lucky enough to be near a store where you can fill a banana box with food for $10. This trip included pancake mix, dry cereal, pasta, dry and instant rice pouches, lentils, yellow split peas, fajita sauce pouches, protein powder, cranberry juice, weight watcher shakes, frozen cottage cheese and yogurts. As well as a bunch of kind bars chips and candy bars. I add some fruits, veggies, milk and marked down or loss leader meats to total less than $50/ week for 2 adults. We also have our own chickens for eggs and meat as well as a large garden and can/freeze/dehydrate our produce.
I am taking notes because I did grocery shopping today and just for myself it was $70. I did meal prep once home; I have salad "fixins" ready, roasted chicken breasts and I threw together a beef vegetable soup. I also am going to make potato soup later in the week. It all adds up so quick! I would love to see more ideas with a $1/meal. Or maybe a pantry challenge + $1
I usually cook an entire bag of beans without the seasoning then when almost done I take out whatever will be left over after dinner and freeze them so when I am ready to use them all I have to do is take them out of the freezer and season same thing with Rice if you're in a rush it's fast ...
You have such great ideas! My husband and I went plant based about 12 years ago and after about 8 years I just got tired of the same stuff. Now we eat two different diets and it’s exhausting trying to cook for the 4 people in my house that all have different preferences. I love the pancake bake idea- never heard of that before and the beans with potato flakes is something that I’m very excited to try! Thanks for the ideas and I’m sending you best wishes for the rest of your pregnancy and birth❤
Ditto, don't love maple syrup. Really enjoy your cheap vegetarian meals. I've been vegetarian, not vegan, for 43 years now but you come up with new things for me to try while living on only social security retirement. Thanks.
I am so grateful to find your channel. I am an older person with limited funds for food and a lot of hospital bills. But I am so glad to find out about bean burgers . I have been using frozen turkey for some if my protein meals. I am also very happy to find out about making six serving of breakfast with pancake mix and bananas. Thank you for helping me stretch my food budget .
My favorite is your bean burger recipe! So many plant based burger recipes have a million ingredients and as a busy Mom I need quick and simple so thank you❤ potato flakes went on my grocery list this week!!🙏
I’ve been subscribed for a long time and absolutely love your channel and content! Thanks for helping all of us eat cheaper and healthy! Something I would LOVE to know is how much you spend on a monthly basis for groceries?? If you have mentioned it in the past I apologize for missing it! Congrats to you and your husband on your baby ❤️ I’m a silent watcher but am so so happy for your little family !
I was just talking about your black bean and potato burger on another channel. I love the idea of adding bell peppers, onions and green chiles to it. That sounds so good.
I'm at work and just ate a 2 ingredient meal prepped burger - made with smashed steamed broccoli with the potato flakes (and onion powder/garlic powder). The idea to use potato flakes rocked my world, thank you!!
I did a $15 challenge for 1 week for 2 people in January. It can be done. I would not want to have a steady budget of that. We ate well but it was hard to include all food groups. 🙂I am not a huge fan of potatoes but I could eat rice every meal. So versatile. I use up bits and pieces for fried rice at least once a week.
I love the budget meal videos! Thanks for sharing your recipes. My favorites were the pancake bake and the bean burgers. I'm trying those out for work week meal prep 😊
Just found your channel today...new sub! I'm not a vegetarian, but my goodness, if meat prices haven't gone up! Lately, I've been buying ground turkey instead of beef to save money. I've also been buying more beans and rice, of course. I love your idea of bean and potato flake patties. Not only does it save money, but it also combines both ideas. Also, it's just me, so I try to make only a little at once unless I can freeze it, but I have started meal-prepping some things. It really does help to have a couple of things made ahead as long as they won't go bad, which would defeat the purpose. I look forward to more videos, and I can't believe I'm just now finding your channel. Yay! 🎉
That is tough. Breakfast, oatmeal with an egg and half an apple? Lunch egg salad with honey made bread or tortillas? Dinner, cook dry beans with rice, add a soft boiled egg over it, leftover tortillas from scratch could become chips if toasted to serve with it? Left over chips can be toasted with an oil or butter and tossed with sugar and cinnamon, or drizzled with maple syrup or honey.
I will definitely be making the veggie burgers for my vegetarian teenaged son. The cost of buying frozen veggie burgers is getting unaffordable and these looked so good - and easy! TY
Similar to your black bean burgers, I used to make barley, mushroom, and softened grated onion patties, they were amazing with fresh homemade moz or grated cheddar on home made tortillas. Cooked leftover broccoli or spinach with flour and cooked crumbled faux sausage with cheddar cheese made into golf ball sized balls and baked are tasty and affordable. Add an egg and more flour or some protein powder for higher protein. Equal parts shredded sweet potatoes with cornbread batter makes tasty fritters, we like ours with cumin and sea salt.
Oooh, I'm gonna try those sweet potato-cornbread fritters--I've got a sweet potato (and the cumin & sea salt!) and I've been wanting to use up the cornbread mix...thanks for sharing that!
Thank you so much for your video. I find the information on prices very useful. Groceries are shockingly cheap in America. I live in Singapore. And an equivalent box of pancake mix, 450g, would be at least $4. Potato flakes, at least $7-8 for just 500g. Prices in SGD. USD1= SGD1.35. Even our RICE is more expensive! Any 1kg bag of decent rice is at least $3. But if you buy a 10kg bag, the price goes down to about $18-30.
The bean burgers and veggies look so great. I'm not crazy about bananas but that recipe would be great, for me, with blueberries or some type of berries, or chopped pineapples!!!
I always add milk and egg to pancake mix (homemade is cheaper!) for more protein. Yes added cost, but also added nutrition. Our favorite to-go breakfast are egg burritos and challahs.
I love your bean burgers! They can be customized to what you feel like or have on hand, they hold together well, they're inexpensive, and I think healthier than pre-made vegan burgers. I don't care for pancake mixes, but I'm glad to be reminded of baking the whole batch as a convenient option! How about a breakfast challenge? I eat oatmeal just about every day. Is there a cheaper alternative that is still nutrious? (Maybe your pancakes are cheaper? I haven't done a cost break down.) :-)
The pancake bake is sort of a heavier version of the Dutch Baby we make, started on the cooktop and finished in the oven, and usually served with whatever berries are in season. I have no idea whatsoever why it’s called a Dutch Baby!
Great ideas - thank you Miranda. Is that regular pancake mix and you just pour it into a dish instead of making single pancakes ? It looks yummy . The bean burgers also look good 😀
Yes just regular mix! Add water or milk per the boxes instructions and bake at 350 until set! Usually 35-40 minutes depending on how deep of dish you use
The bean and potato flake is something new for me. I always thought potato flakes are as processed as fries. It looks like this combo is sturdy. I like veggie burgers but I have yet to find a home recipe that holds together well, so I don't really make them at home.
Oh my goodness, you just blew my mind with the chili bean burger with potato flakes, what? It's breakfast time here right now and I'm about ready to run in my kitchen and make them! Love this video, thank you!
Oh no, my pressure cooker did same thing when I tried cooking a family package of chicken breaststroke. I didn't know anything about fixing it-- I bought a new pressure cooker. Now, I'm thinking bout checking to make sure seal is put in right. Love your videos!!! Thanks for all you teach us, from grandma Katie in Oregon
@@flourishingmiranda Unfortunate, but you can buy a replacement seal. At least I know you can with Instant Pot brand. Love your videos! 50 cent meals is my vote!
I have never seen potato flakes and beans mixed together . I think it is a fabulous idea and it looks really good. Thank you for the idea and the pancake bake I have only seen once before. That too I could eat the whole pan. I love carbs but right now I am on low carbs. But not for too long. I don’t have any weight problems but I was really addicted to carbs. Organic carbs but still it’s not good for me temporarily. 👍👍👍
Those burgers look amazing. I always have canned beans on hand as well as Bob’s Red Mil potato flakes. So just add potato flakes to desired consistency?
Yes! You can’t mess it up! About 1-2 cups of potato flakes to 1 can of beans (don’t drain) is always perfect for me! I use however many flakes I have on hand! Cook them until they’re a bit crispy on the outside and they’re perfect!!!
That pancake mix has milk in it. Just in case you didn't know. Edit: my apologies, I didn't know you had gone to vegetarian. That's wonderful to hear! Have a great day. 😊
I have so many lentils and dry great northern beans and have no idea what to do with them. I feed myself, my husband ( meat eater), and my teenage son. My husband only likes meat and potatoes but I'm trying to incorporate more plant based and vegetarian meals that he will eat them because I am tired of making meat when I don't eat it. My son will eat most everything, he's a teenager.
Have you ever made a lentil loaf? It’s like a meat loaf but it usually cooked lentils as a replacement!! Northern beans are my fav unless I’m making a soup with them but sometimes adding cooked beans to a pasta can be really delicious!!
I to am trying to have more vegetarian meals. My husband like yours is not liking it much. So this month the roasted cauliflower tacos. With plantains I am going to make when I work my Nanny job. Later this month.
I really dislike the demonizing of certain foods, esp VERY normal ones and those that are highly vital to certain cultures. I do me, you do you and have a nice day haha! All these meals look great! I've never baked pancakes before but that looked so good!
I made a comment on another channel that you could eat for $2 a day if you ate bananas, oatmeal, beans, rice, lentils, carrots, onions, cabbage, potatoes, pasta, etc. I can't believe how many people were angry and offended. Humans have been thriving on these foods for thousands of years.
So true! My husband is from Peru and that culture eats white rice with everything. It’s just a staple in their country. He is extremely healthy and so is his extended family. It’s really about what else you eat with it, activity you get etc. no food should be off limits unless for medical or personal preference
I loved the bean burger recipe! I can't wait to try it! I also loved that two of your meals were naturally gluten free (which, unfortunately, I need). So happy that I found your channel!
Pancake bake looks great! I have a big bag of pancake mix that I got for 2.99. Not vegan but couldn't pass it up under my budget. Congrats on your pregnancy sugar!
I would love to see some $1 per meal options, that feel more luxurious, but are still so much cheaper than eating out. Meals that don't make you feel like you are having to eat on a budget. For example, for 2 people, breakfast, lunch and dinner would make 42 meals for the week, so a $42 weekly grocery budget.
I’d love these ideas for some reason I just never would’ve thought in case like that but that’s all like so many problems for me I was in the hospital for a month they had very limited food that I liked and could eat without getting nauseous and I for a month I ate every single day. I ate this exact foods for breakfast. I had banana, pancakes and bacon For lunch I had a bread roll and yogurt and pudding if they had it sugar-free and for dinner, I had a bread roll pudding any yogurt that’s all I eat for a month
You popped up in my TH-cam today and I’m so happy you did! I‘m going to make the bean burgers and I also want to try the pancake bake. Can you tell me what size the pan was that you used?
This is amazing!!! Keep making these videos. I am not vegetarian. However, your meal helps me to balance my daily nutrition meals. Just wondering, when making your pancake pan, do you spray before, if so, what do you use. Thank you:)
Hi Miranda! Don't know if you'll see this but I've just been to the store and got potato flakes so I can try your bean burgers. I'm trying it with black beans first since I already have those at home. I was wondering if I should add seasonings like salt or pepper or something else? Also if I add onion they should be cooked you said, does that mean fried on the stove before adding? (English is not my first language :)) Really excited to try these!
Before I found Boost forDiabetics, I used to eat ceral, eggs_once in a while pancakes biscuits andgravy., not often. But now I drink One boost per day for breskfast. Some I also eat a peanut butter Sandwich. Again not a lot.
We have a monthly budget of $300 for 4, 2 adults and 2 teenage boys. That breaks down to every meal being $0.89 cents. We eat high protein and no bioengineered ingredients. So it's tricky to find quick easy work around way to make food. We make homemade tortillas, bread, rolls, buns, pancake mix, cake mix, brownie mix, mayo, ranch dressing, ect. It's fun to see how cheap everyone can get their meals! I'm watching to get ideas, but no one is really keeping the ingredients clean from bioengineered food ingredients or preservatives; so I still feel a bit on my own to find ways to save on the groceries. So maybe this would be a great challenge for you to add to some of your meals. The bean burgers look really good, if I can find potato Flakes without bioengineered ingredients, I will definitely give them a try! Thanks for sharing and Happy creative cooking!
I haven’t read the comments on the other videos, but are they saying the starch is bad in rice or are they saying it should be organic to help limit the arsenic in it? Either way I like rice and your budget videos. Simple food is often overlooked, but the best! I am going to try the pancake bake with some dried strawberries.
Were you gluten free before? I love your budget ideas. Can’t do the cheap pancake bake though, but it looks delish! Oh and congrats on your pregnancy! I’ve clearly been out of the loop for awhile! Happy for you!
Yup I've chatted about this in recent videos I don't love to always repeat myself but pregnancy has brought me some reprieve from my gluten intolerance it's super common for most women!
Comment below and tell me a budget per meal you'd like to see in an upcoming extreme budget meal video!
Agreed

You can cook beans on the stove top. It takes longer even if you soak them overnight but it is an option.

Can't wait to try the burgers.❤
I Love Love your Burger Recipe. My Favotite.
I really dislike the demonizing of certain foods, esp VERY normal ones and those that are highly vital to certain cultures. I do me, you do you and have a nice day haha! All these meals look great! I've never baked pancakes before but that looked so good!
Pancake bake is the real MVP! No flipping, just mix pour bake and enjoy!
Some want a filet on a bean budget 🤣
@@princessdumbarton9877 ~~ Why would people get offended!?!? You gave a great piece of advice. People are taking themselves too seriously.
So true! My husband is from Peru and that culture eats white rice with everything. It’s just a staple in their country. He is extremely healthy and so is his extended family. It’s really about what else you eat with it, activity you get etc. no food should be off limits unless for medical or personal preference
Not vegan, but love watching your channel all the same. Hope you're happy and healthy! 🌻
I’m not vegan either ❤️ everyone is welcome!

I loved the bean burger recipe! I can't wait to try it! I also loved that two of your meals were naturally gluten free (which, unfortunately, I need). So happy that I found your channel!
i ate GF pre pregnancy, but i haven't had to watch my gluten intake currently so you'll find a lot of GF options here!
🍔 & veggies
I still make your bread recipe that you posted year(s) ago, my family loves it! And so cheap!
Do you have a written Recipe for the burger that I can copy?
bravo everything looked good,ez and cheap!!!
Hopefully you just needed to replace your seal on the IP. Thanks for the ideas!
But now I drink
One boost per day for breskfast. Some I also eat a peanut butter
Sandwich. Again not a lot.
Exactly starch isn't bad in moderation like everything else
Those vegetarian burgers look amazing! I can't wait to try those.
My favourite was the burgers 🤗🤗
I love WinCo chili beans. The burgers are my favorite.
Great Job Miranda ! And You look Amazing 🪷🌷
Everything looks yummy... I think I want to try the burgers. I think 50 cent meals would be great.
I'm going to try those bean burgers. They sound yummy. Thanks
I'm so afraid of instant pots malfunctioning and exploding, I've never had one
Bean burgers were my favorite
What did you grease the pan with for the pancake bake?
I need to try the bean burgers 😌
I haven’t read the comments on the other videos, but are they saying the starch is bad in rice or are they saying it should be organic to help limit the arsenic in it? Either way I like rice and your budget videos. Simple food is often overlooked, but the best! I am going to try the pancake bake with some dried strawberries.
No they always comment rice is bad because it’s too many carbs
from the mrs: great vid! Enjoyed the recipes especially the pancake bake! 50 cents per meal next?
Great idea!!
How do you store the pancake bake? Do you just separate and put in the fridge?
Diabetic here. Can not do carbs. Can you make very low carb high protein meals?
Were you gluten free before? I love your budget ideas. Can’t do the cheap pancake bake though, but it looks delish! Oh and congrats on your pregnancy! I’ve clearly been out of the loop for awhile! Happy for you!
Yup I've chatted about this in recent videos I don't love to always repeat myself but pregnancy has brought me some reprieve from my gluten intolerance it's super common for most women!
Try first replacing the seal and then replacing the pin.
It unfortunately has a crack and i don’t think it’s fixable 😭
