      If I don't have hand mixer and I cover for 1hr,will I still get that fluffy look?

      @@Esteemglorichproperties if you don't have a hand mixer use a whisk and wish for at least 2-3 minutes. It will give you the same results.

      @@FloChinyere This is a great recipe but I do have one question.
      if you are wary of chemicals and already blended ogbono, egusi, spice mix etc. why do you and so many other fellow Nigerians and Africans use knorr or maggi cubes? They contain a lot of salt, msg, preservatives etc. Not to mention that they are produced by unilever and nestle respectively and their track record especially in Africa could not be worse.

    I have prided myself as one of the akara specialist. I even take some some to work to do 'olonga' to my colleagues. However, I learnt something today. The science of leaving it for some time to aid it's 'fluffyness'. I would whisk untill my hands start to spasm.

    Thanks for letting us in on the secret for a perfectly made Akara . I have not told anyone, but my secret has been adding a pinch of flour or pancake mix. Funny, but it works and nobody will know. I don’t have need of doing that now, hopefully. Thanks for letting me know to be patient in blending and letting the beans ferment.

    Wow! This is exactly how my mum makes akara and how i make mine too. I use mortar and pestle to incorporate air to the akara.

    I don’t know the year you are talking about but I schooled in uwani secondary school Enugu just opposite Robinson primary school but that was from 83 to 89 long time ago but those days are the best.even though I don’t live in Bishop anyogu but it’s just around our school then.i love your akara,my wife will make it for the family next week

    I watch this akara receip this morning and decided to make akara, after several attempts to make akara is from one problem to the other either it get burnt or suck all the oil, I stop to make akara, but today my akara making changes.. I can't believe that all I want now is this very akara with pap drowned in evaporated Peak milk even after stuffing my tummy with Egusi soup and ground rice. Chai!     This na real blender grammar. I bought a handblender specially for akara. Easy storage and less drama.
    I prefer using a manual whisk as it's less messy.

    Never knew I have have to whisk the beans before frying. I also used to add too many ingredients. The whole thing always scatter in the oil. Thanks so much for this recipe

      You need to whisk it will make it fluffy it is the reason why our mum used spatula or if you have strong bone in your hand u use it😅 me after my accident i always use whisk

    I never knew beans has it's own yeast that makes it to float while frying akara. I taught is too much water that makes it not to float. I use hand mixer to my akara fluffy because i don't have a mortar. We will always like your video because you usually give detailed explanation and the science behind cooking that most of us are not aware of.

      Yes too much water will prevent floating, will also spatter. The sugar molecules behave like "yeast" or other leavening agents.
