  • Queso fresco - believed to be Spanish, but mostly seen in Mexican cuisines. Since they are 'fresh cheese' and does not really melt when heated, it is usually reduced to crumbs before adding them into dishes.
    The MINTD is used to cut them into crumbs quickly in high volume.
