    Celery is so easy we plant in the spring . Celery is a heavy water user so to help blanch and keep water around celery we cut a 6 to 8 inch nursery black pot with bottom cut out. We put pot with cut bottom up and hill up the outside of pot some then when watering fill the cut pot half full of water. It doesn’t matter that the plants don’t come to the top of the pot they grow up and then out the tops of pot then at end of season carefully slide pot off whole plant the best part the pot helps keep celery cleaner too.

    I went to Juancayo Peru in the Andes mountains on a mission trip. We visited the food market which was HUGE. They had potatoes in so many colors. Blue, black(ish) red, pink, yellow ( like bright yellow) greenish, violet, maroon etc. It was such a beautiful sight.

      @@justgoodness333littlehomes5 wow, that sounds like a great trip. The people of Peru are awesome. We worked out of the city of Trujillo and traveled to the mountains just for installation of the wind turbine. The elevation change makes work very difficult in the Andies. We had large open air food markets in the city. I expected to see lots of potatoes, but the huge avocados are amazing also. I traveled with students from a Christian University here and we had opportunities to attend church with the local missions church. Thanks for sharing.

    I add dehydrated potatoes ( instant potatoes if you don’t have a dehydrator) to thicken my soup to a thicker texture. Also, I add a little heavy cream and a pat of butter while reheating. That is a hug in a bowl on a cold, Winter day. 😋

    My Amish neighbor taught me the trick to celery growing. Plant in August, fertilizer and water EVERY DAY. I had beautiful celery this year! They also blanch it by wrapping the stalks for a week or so. However, the celery wrapped cannot take a frost so make sure you cover it. They all grow tons for wedding season so I trust them. 😊
    And where did that carrier come from? I desperately need that to take my jars to the basement.

    Did you know Lovage is a herb that tastes like celery and is a perennial in Zone 6a where I am for a few years at least. I started some Tall Utah celery I started from seed in January last year. It grows painfully slow from seed. It was to small to harvest this , year so I hope it over winters well and I can try it next year. That Breville of yours is quite the machine!

    I think the no canning tomato peels tale is because, yes, the skin can conceal bacteria, etc., which can be bad for germ growth when water bath canning. I have always canned with tomato skins (Foley) and pressure canned tomatoes using skins without issue. This is the way my grandmothers did it. Right or wrong, it does make fantastic spaghetti sauce and tomato soup from the jar.

      We actually did a taste test of sauce with skins and without. The sauce with the skins tasted so much better.

      I think it would still just take off the sharp edges until it got round enough to peel. I might give it a try next time just to see. Thanks for the idea.

      Hello. Welcome to the farm. I looked up several recipes for potato soup with bacon and the ones I found gave 75 minutes as the time. After reading your question, I see that there are others that say 90 minutes for quarts. I'm not sure which is totally accurate, but if I make it again, I'll probably process the extre 15 minutes. I've made note of that in the recipe in the description. Thanks for bringing it to my attention.

      Thanks! The jar carrier is actually an antique milk carrier. I works great for quart jars.

    In my search for your Breville Food Processor, I learned it is discontinued. There were 2 additional size dicing blades made for it and sold separately that are still available from Breville. The additional blades are one smaller (perfect for onions, etc.) and one larger, that might be about right for your potatoes. I called Breville customer service priced them and learned shipping is free. They have replaced your model of processor with the Paradice that comes with all 3 dicing blades.
    I'd been so curious to know if and how that peeling function worked, so glad you tried and showed it!! I'm sold!! Now to wait for the Paradice to be on sale again...it was discounted the week of Black Friday then went back to regular price on Black Friday. :(

      @@LadyCinnamon312 Thanks so much for the tip!! I'll have to go check again and see if they have gotten the Sous Chef 16 cup Peel and Dice!! They still make, and Amazon carries, the 16 cup Sous Chef that doesn't dice or peel.
      As I understand from Customer Service at Breville, they still make the 16 cup Sous Chef that doesn't dice, but discontinued the dicing and peeling model and replaced it with the Paradice 16 Peel and Dice that includes all 3 sizes of dicing blades, instead of only the middle size one coming with the processor and the other two being sold separately as accessories.
      The Paradice 16 is pricey but I saw it reduced $150 for a week or so before Thanksgiving then back to full price since Thanksgiving. I'm watching for that sale again!

    I can NOT grow celery either. In my kitchen, all of the work gets done in that corner between the sink and the stove. Mt heat vent is also there, so you can guess how often I have to clean up that vent. I think only a man would place a vent in that corner! God bless y'all and keep growing.

    can I ask why only 75 minutes for quarts since there was bacon in it?

      I had someone else ask that. The recipe I used gave 75 minutes as the processing time, but in looking further, many other recipes recommended 90 minutes. I changed the recipe in the description, but don't have any way to change the writing in the video. I'm not too worried about the ones I did, but I probably will use 90 minutes when I make it again.

    I think I can cut potato in 25 seconds and don't have to clean the mess in the processor, go back and scoop indentions/eyes, or use the electricity. I know this is how they peel commercially and saves on labor. But, they also keep it going until all eyes are gone (more than 30-40 seconds on your machine) and have loose much more flesh. I also think there is time component. What else could you be doing after you hit the go button and during the 25 seconds? Is there a ROI, CBA, time saver? I don't know. I really don't want to add more gadgets to the drawers.

      I use the food processor for so many things that it's worth it to me. I was surprised how little flesh it took. It would take a lot if you ran it long enough to get all of the eyes.

      They really have to be round to be able to roll around on the attachment. I think it would still grind them down until they are more 'round'.

    Q: if you can’t can dairy, why can you buy dairy in a can?

      You can find dairy commercially canned, but they use canners that get higher temp than any home canners and they often use preservatives as well. Some people say it is safe to can dairy, but the majority of reports advise against it. It's very easy to add milk, cheese.... when heating up the soup.
