I’ve always wondered what they do with the end piece that they pinch off. I don’t imagine that they sell it after making it a swan. Do they throw it or melt it and add it to new batches?
It's hard candy... once after it getting cold nd shape (it's hard) that's why they need a gloves, while on process to making it. Cuz they had to do all step while that candy still soft nd hot.
It's sugar, raised to boiling, then poured onto these heated metal tables to cool a bit to a thick malleable putty. They add coloring, and many parts are stretched on the hook(embeds air bubbles, which makes the candy lighter/airy and opaque rather than clear). Any time you see the rolling or forming and they're wearing heavy gloves means it's only malleable due to being pretty hot(like would burn you hot). When it cools down, these candies are hard, but not dense like clear sugar candy(Jolly ranchers, rock candy, etc). The spectrum would be like Cotton Candy->Peppermint puff candy->This->jolly rancher, with the differences mostly down to how much air is incorporated.

why the scissor poking
Anyone know why they poke the outside of the candy with scissors just prior to stretching it out?
They do that, to let the air which trap inside that candy. will go out to make that candy more in shape.
