I live in a senior/disabled housing complex. Its subsidized and offers a program where they feed you lunches monday through Friday. We also have a monthly food truck that comes right here. They also offer an aide too help you with housekeeping.
The Knorr tomato soup is really good. Precook the Kale, portion it into quart freezer bags, you can add the kale to the knorr soup to amp up the vitamins

I've known of a lot of broke seniors. I just found out yesterday that my parents will be losing their house and having to move within the next two or three months after a failed chapter 13...which is their fault for bad money management, but it does cost a lot to just have your every day things. My mom has worked HARD her whole life, and doesn't have anything to show for it :( I really don't know what they are going to do. My Dad doesn't understand that they probably won't be able to sell their house in three months and how hard setting up and selling a run down house really is :( Another example is the women that I did the farmers market with were all at least 60 or older, and they were talking to me about going to the the food bank, and the free food giveaways that happen here. It was really sad to hear an almost 80 year old woman tell me I don't know how I'd make it if it wasn't for the food pantry! LORD JESUS guide!

I usually air dry my cilantro and then put it in a jar. Cut the stalk out of the collards, roll up and slice into ribbons. You can cook them with any kind of flavorful meat and broth. Don’t forget to wash them first!

I am one of those baby boomers who doesn't have a retirement plan. I am blessed by God that I found an apartment that I can afford. He has also blessed me in many ways. I am going to the food pantry in a few minutes to stretch my monthly budget.

I cook collard greens with some bacon and onions and use chicken broth instead of water. I like to add some red pepper flakes and a splash of apple cider vinegar at the end.

Wow another great haul. I'm a senior citizen living on SS and yes it's a struggle sometimes. But God's got this! Your tortilla chips would be good with the collard greens dip. Tho I'm in MS, I've never seen that dip in stores in my area. Kinda crazy since we grow/eat a lot of greens here. Lol. But I do have a recipe for it that I just havn't tried making yet. I like to experiment with different things and I wonder how the dip would taste served over baked chicken or turkey. You could dehydrate your cilantro in your oven if you don't have a dehydrator. Some air fryers have dehydrate settings if you have an air fryer. Once dehydrated, keep in air tight container and it will last a while. The fresh collards can be blanched (put in boiling water about 3 mins then removed to drain), when cool, put in freezer bags to save for later use. Pinterest has lots of wonderful recipes for different foods, you might take a peek there to find a good recipe to use them. Your canned green beans-drain and quick rinse (I just leave them in can and add water and drain from can), put in sausepan add your salt and pepper to taste then add some garlic powder and Italian seasoning. You can dry rhe cilantro leaved in the oven(look up on line) and store in an airtight container for a couple years. I've used iin cooking recipes and put in rice with lime juice. You can use the rye bread for patty melts.
You can use diced tomatoes in a can to make salsa if they are cheaper than fresh. Also you can make stuffed collard greens similar to the how you make stuffed cabbage with rice and meat filling. I hate cilantro so not sure what to use that for 😂

You can also put cilantro in your oven on a low temperature and let it dry out basically make powder out of it like a seasoning.
