    Advice on avoiding separation?

      good question! You'll want to get the temperature to 300 degrees gradually, so I would make sure the heat is set no higher than medium.

      @ouichefkitchen I find it typically takes me about 20 minutes to reach 300. However, I still experience separation almost every time (particularly when adding vanilla).
      What baffles me is the difference amongst recipes between stirring constantly, only a little, or not at all.

      It sounds like you’re doing all the right things! Have you tried using a different saucepan? Perhaps the one that you are using isn’t conducting heat properly?

    Walmart has silicone utensils, and they work quite well. Don't speak ill of where many people shop, or about what they can afford to buy.

      Wow, really? That was not what the comment was about or referencing. He was simply stating make sure whatever you are using is rated to withstand high temperature but as usual someone has to get in their feelings and turn it into something it’s not.

      I see both sides of this coin. Maybe he could’ve stated it that way instead of mentioning a store. One thing Walmart has really changed their store content to be of a higher grade. I typically don’t shop there, but I was quite surprised when I went, there was a girlfriend recently, and found a lot of namebrand items in that store. Secondly, I have a book called the “power of words” & I keep it in my library to reference it on a regular basis simply because you can use words for the positive, and they can also do great harm. There are a lot of people struggling financially in this world, and not because they haven’t worked hard, all their life, but for whatever reason circumstances find them shopping where they don’t necessarily want to shop. We don’t have to demean that situation, or that person with our words. The individual who was doing the video could’ve simply said due to the high heat of this candy, try to be aware of using high end utensils so you don’t get burned or it doesn’t stick to your utensils and you get frustrated when it won’t spread. Nobody wanna cut their feelings hurt had that being said. If you’re making your recipe for the first time in your life, you may not realize just how very hot candy recipes can get…, and not even just candy. I made a blueberry pie for my son who is about eight years old one year. I had just taken it out of the oven and it looks so pretty as I could decorate it to top pastry. I heard his younger sister, waking up and went upstairs to get her when I heard him screaming and crying and I was downstairs to his aid. Only to find out, he has put his finger in the middle that blueberry pie were there was a design cut out, and the thick, blueberry filling not only burnt him from the heat, it clung to his skin and did not want to come off without taking skin with it. Note the new parents call Lynn keep aloe, vera lotion, or Alevera plant in your home for situations where children get Burnt. And by the way, that pie was not left down where he could get to it, but he made a choice to climb up. I was a responsible parent and I would’ve never thought he would do that because I bet pies on a weekly basis. He still talks about it to this day.
      Anyway, These type of foods get very hot and another way you can keep your metal spatula from sticking is put a TINY amount of butter, not margarine on both sides of the spatula to help yet run smoothly over your milk or chocolate, or whatever topping you’re using such as almond bark. I have found this has helped a lot. Some people use a container of hot water and then wipe it off with a paper towel, so no water gets on the candy item you were working with, but the heat remains in the metal spatula long enough for you to spread everything. Nice and smooth.
      I cannot wait to try this recipe. I am seeing other topping options as he mentioned with the coconut. Like fine angel hair coconut is a very nice type of coconut to use in candies instead of the bigger, chunkier coconut for pies… You might consider that if you haven’t thought about it and like coconut.       about a week in an air-tight container. Stick them in the fridge for longer. But honestly they'll be gone in a couple of days!
