    So what makes it ferment? It looks like they put mares milk in a sack, and beat it 3000 times. That does it?

      Its not uht nor pasteurized

    where did the yeast come from. That cake that they are using to make airag?

      The aeration process also introduces wild yeast in the air as well as the well seasoned hide sacks and the recesses of the ladel/paddle that is used. Similar techniques were used for the vikings and the Meade making process!
