Thanks for the wonderful videos! Sorry about your hot buns, have you tried using two sheet pans nested together, that would create an air-gap between the surfaces and they might not get as hot!
Looks tasty. We call it a pepporcini roast where I come from. We always eat it on a hoagie bun. But I make a sauce that is sour cream and horseradish to taste. It is delicious!

New idea for you Brad. Reuban popper. Cream cheese, Swiss, Thousand island filling, stuffed in whole leaf sauerkraut wrapped in pastrami. Think it could be a bell ringer. Love the channel. Great stuff

I made tortas de cachete using the same process just on bollios and used some of the salsa used for tortes ahogadas!
my favorite Mississippi style is a boston butt. smoke it, then braise when you would wrap it. reduce the braising liquid to a thicker sauce, maybe cornstarch slury trick on it. amazing sammiches.

You should put a fan out at your table, let it blow gently across it when you are prepping, and the flies will not be able to land on the food. they do not like the wind.

I did cheeks in a very similar manner (Bastrop Boy). Let them cool, refrigerated overnight and sliced those delicious sin patty’s and put them in my homemade PHO . Oh My Gurd!
