- Spice up your chorizo con huevos with jalapeños, onions and tomatoes. Vianney is bringing back her hearty chorizo and eggs tacos, this time a la Mexicana representing the colors of the Mexican flag.
INGREDIENTS
1 ½ tablespoon of olive oil
1/2 cup diced onions
1 Serrano or Jalapeño chile, minced
8 ounces, Mexican chorizo
1 large tomato, chopped
6 eggs
1/4 cup of milk
1/3 teaspoon of salt
1/3 teaspoon pepper
1/4 cup cilantro, chopped
flour or corn tortillas
DIRECTIONS
Heat oil in a skillet over medium-high heat. Add onions, chiles, and cook until slightly translucent.
Add chorizo, break up with spoon, cook for about 5 minutes or until chorizo is fully cooked.
In a bowl, whisk together eggs and milk. Stir in tomatoes.
Add the egg mixture to the skillet, fold in eggs, cook until eggs are set, about 3 minutes.
Serve with warm tortillas.
