Forgive my ignorance. But how do you rehydrate the marshmallows? I love the lemon idea. I've thrown out a lot of lemons because they've ended up being in the drawer too long and I seem to have forgotten about them but to have a container of freeze-dried once to pop in my tea sounds excellent. Keep up the good work. I'm always learning something new.
No ignorance here, we are always here to explain, show and teach! The marshmallows (in this situation) are not going to be like other food where you add water and it comes back to life, unfortunately. They are delicious in this VERY CRUNCHY state but are quite good in freshly made Hot Cocoa. They have a bit of bite to them still but last the entire enjoyment of your beverage. In the future when we do them again, I will be cutting them to 1/4 of their size for smaller more manageable sized marshmallows. They will store better and will melt even better into beverages! The lemons are seriously incredible, popping one out into your cup and then pouring some hot boiling water over it, just comes back to life before your eyes and the smells are fantastic. Also for a recipe you can crush a slice up and add it peel and meat right to your recipe and it is amazing! Lots of delicious lemon flavoring without all the fake flavor. I always seem to find blueberries lacking and underwhelming in the freeze dryer. Is it just me? Maybe it's the raw product? I've just potted several bushes to grow in my hoop house (they don't survive in my soil or intense summers in my north Texas garden) as a last resort to growing my own. Maybe those will be better? Homemade marshmallows is without a doubt one of the most rewarding things I have ever done in the kitchen! Everyone is always so amazed that they have actual flavors other than just "sugar sweet". I've been experimenting slowly with flavored marshmallows and the results have been mixed but mostly positive. I've already learned to make them TINY if they are meant to be freeze-dried. Been there, done that, cleaned it up. I don't comment often, but I wanted to let you know how much I enjoy your content. You are a doll! I definitely feel the same about the blueberries but I can tell you without a doubt that the wild blueberries ARE INCREDIBLE, I caught Brad and Filson inhaling them, it is just so much more flavor! Here is hoping that your new growth bushes provide a better product :) It was amazing to see them come together, as I was mixing them up I was amazed to see how it changed form before my eyes, I would love to do some seasonal marshmallows like peppermint for winter, spiced for fall and maybe like a lemon for spring or something that is in the citrus area.
