Made this last night. Turned out great. Sweetened it with an allulose / stevia blend instead of sugar and made the crust out of roasted hazelnuts and pecans that I pulsed in the food processor with melted butter and the sweetener. I don’t have a 6” springform pan so I used one of those disposable Reynolds aluminum pie pans, which just barely fit in my air fryer. The filling was kind of mounded up in the crust - I had to place a foil tent over it - and I had to cook it with the foil off a good 10 minutes longer than the instructions called for until the center was suitably jiggly, but ultimately it came out great. I’d make less nut crust next time as it kinda dominates the cake and use more butter as it’s a bit crumbly but overall delicious and much easier to make than cheesecake in a traditional oven. Will definitely do this one again!
I recently started making cheesecakes; I've found the nut based crusts overpowering as well. Funny because they've always been my go to crust for other pies.
Excellent recipe so easy to make and delicious. I’ve made this twice now. The second time I wanted to reduce the sugar so I did 1/4 cup sugar and 12 drops of Stevia it was fantastic…no Stevia after taste. Also I used only a teaspoon of brown sugar in the crust and 1/4 cup of toasted pecans…reducing the gramma wafers to 5. Next time I think I’ll try grating some orange zest into the batter. Thank you for this base recipe and the cooking technique.
Lisa, I happened across this video yesterday and decided to make this. I have a Ninja foodie and was able to make the next size up (8”) and I have to tell you, it came out incredible! I had to up the ingredients of course to allow for a bigger cake, and a bit more baking time was needed... but it was a 10! This video you created gets to the point, was perfectly taught and my husband enjoyed the most delicious dessert! Thank you! It’s a keeper. 😉

@@russellborrego1689 haven't made one empty oven for ages. Like doing them in the instant pot, it is smaller on my dwindling family. I have found that the recipe from 'this old gal' is the best recipe that I have tried. Have not tried one in the air fryer at this time.

We made one full-size cheesecake batch, and just cut it in half across two ekovana 7" stainless steel cheesecake pans with removable bottoms. I guess we'll find out tomorrow if there's a significant difference. 🙂
I am definitely going to try this. I have a small family so it is nice to have a recipe for a small cheesecake. I hope ATK develops many more recipes with the recommended air fryer.
Likely, adding puree'd pumpkin to mix would do it... I have gone fancy and layered salmon flavored, with basil flavor, with light cheese flavor, (leaving out the sugar) -- for an incredible Cocktail loaf... in slices!
ATK: does this whole process need to be done on the 'air fry' setting? And, what's the difference between the 'air fry' and 'bake' setting? I used bake...doesn't seem to be cooking right. 😐
The air fry setting uses a strong fan to blow very hot air throughout the oven and around whatever you are cooking. Air frying and convection cooking always cooks things faster than normal baking. Hope that helps. Happy cooking!

@@Buffal0Al We have never experienced that with ours. As I said, we have the InstaPot brand as they do and I have to admit it works great. I was not in favor of getting one, it was my wife’s idea and purchase (one day when our 15 year old toaster over goes we will probably get the Beville Smart Over with he air fryer which too is the same one they have in this video.)

@@Buffal0Al Sorry to hear that…That would be very annoying for sure. I’m not sure what it could be because the pan (drawer) and the grate are both coated metal. My suggestion would be to contact InstaPot and see what they say. I do know that the silicone seals that are in some pressure cookers can retain odors, but I don’t think this air fryer has any seal on it.
Great info. I am trying to make brownies in a stone round pan in the air fryer, same one your are using, but they are getting very done on the edges and still very runny in the center. So I am going to try to cover it with foil cooking at 300. Then remove foil, then leave in the oven like you did with the cheesecake. I actually thought about you cooking the cheesecake in the air fryer and came to check out your temps and time. Hopefully these steps will be the key I'm looking for.
Lied about the hour. :) ...takes 6 hours per your directions but man was it worth it!!! came out perfect. I substituted Lona Doone shortbread cookies for the graham crackers.
Personally, I don't like cheesecake, but I made a sweet potato cheesecake for a Christmas party a few years ago that I was invited to. I transported the cake in the spring form pan to the party but I was on the dancefloor from the time we got there till we left about three hours later. I don't know if the cake ever got eaten but it looked delicious...

Digestives are hard to find in the US, but I agree that graham crackers are not that tasty. I usually use Nilla wafers when I want a mild flavor in my cheesecake crusts, or Biscoff cookies when I want a spicier, more "holiday" flavor.

I've tried the vinegar and lemon juice trick every day for a week and the smell, though somewhat diminished, is still overwhelming. I don't want my food to pick up that foul stench. How long does it take for that awful odor to go away?

The food processor method is primarily to get a smooth blend quickly without incorporating a lot of air. If you use a mixer, make sure all ingredients are at room temp.

Its a a small cheesecake, so since fractional eggs are a pain, they tweaked the cream cheese. Put the rest on a bagel. Obviously you're welcome to try it without, but maybe use small eggs or something?

Can I suggest using what’s called Digestive Biscuits. They’re so much tastier than Graham crackers.
UK people can use them. They will be hard to find in the USA.

Try Zweiback toast - doesn’t get soggy like the graham crackers.
I love Digestives (McVities!) and agree they taste great. You can use any cookie, even Oreos, to make the crust. Have fun!

Depends on the unit. Some have almost no smell. Some it never seems to go away.

You might have to cook it a bit longer. The heat in those isn’t as intense as in a basket air fryer.

Gingersnaps are a nice alternative too.
A number of crisp cookies can be used. I look for plain ones with less sugar.
Yes, graham crackers overwhelm the cheesecake, IMO, so I use vanilla snaps or plain tea biscuits.

She said it takes just about an hour yet it cooks for over an hour and a half plus chilling time of three more hours.
