Hey my brother, I won a BBQ Brisket Championship using just Kosher Salt and Course Black Pepper as my rub. It's also known as a Dalmatian Rub. I use kosher salt and black pepper on all my briskets. Here in Texas it's known as the Texas BBQ Joint brisket. The kosher salt and coarse black pepper will form a bark. Really nice looking brisket you cooked there. You also did an excellent job on the trimming of it. Enjoy that brisket! Stay Safe & Take Care!

That brisket turned out very nicely! I like how unique it is with the live fire profiles in flavor and texture. With Cali being a live fire bbq state, I think this is probably the best rendition of a California brisket I’ve ever seen! Love it man

Da Kanka! Bro you did a awesome job. Who cares about a smoke ring. Looks tender and I’m sure it’s banging. It may need to cool down a little more before cutting so bark don’t chip off. Been a bit busy as of late, so sorry for being late! What amazes me is the little time it took to cook vice being on a smoker! I am not sure if I will ever do a brisket simply because it is just myself and the Little Lady.
