That looks like so much fun. We went on a vacation with friends a few years back and it was amazing. They own a timeshare and we got to spend some amazing time there for a few days. It's always nice to be around fun people and be relaxed.

Not sure if this will help, but we don't have a double stroller. We pop the carrier with the little one in the stroller like normal, and our oldest likes to climb into the basket underneath and ride. Since there is mesh I'm not worried about him over heating. Then we clip the diaper bag onto the handle. It works for us until we get a double. Maybe you could try and see if it would at least work for your trip.
