I made pasta for my girlfriend's family once. Her family loved it because I tossed the pasta in the sauce to finish cooking the pasta. My girlfriend said she didn't like it because she liked the sauce on top of the pasta. That was the last time I cooked for her.

You can put cheese and also Pineapple on your seefood pasta, but It Is not an Italian dish. The Reason Is that the taste of cheese Is more strong than seafood One and you don't feel the Sea in your dish. But of you use Frozen american Sea food and American parmesan you can mix them, It Is (not) good 👍

Now I'm following Dr Huberman's advice from his podcasts to not eat in the morning, eat protein based foods for lunch, then starchy foods for dinner. I sure miss breakfast tho, but i do feel less sleepy (carbs make you sleepier).

Pasta alla norma (veganized): tomato sauce with cubes of fried eggplant and vegan ricotta Pasta al pesto (veganized): blend basil, olive oil, pine nuts and nutritional yeast Pasta e piselli (pasta with peas) Pasta e fagioli (pasta with beans) Pasta e lenticchie (pasta with lentils) Polenta (i know it's not a pasta but still a very good dish, you can pair it with any sauce) Pasta ai funghi (pasta with mushroom sauce): you can make the sauce white, by adding just garlic, parsley and heavy cream or make almost a mushroom ragù (personally my favourite!), Literally follow an authentic Italian ragù recipe and add the mushrooms instead of the meat (i use various types of mushrooms for texture and flavour) Parmigiana di melanzane: thinly (THINLY) sliced eggplant, fried, layered with tomato sauce and cheese (sub with vegan cheese). Sometimes we add prosciutto cotto to it, so you can also add vegan deli meat if you like it. Cover in tomato sauce and a sprinkle of vegan cheese and into the oven it goes! This is what we call a "Sunday dish", because it's high in calories and fat and it's just not good to eat it every day! A healthy version is made with grilled eggplant. Oh for goodness sakes sauce's are made with fresh tomatoes , San marzano canned tomatoes, passata, and even yellow tomatoes and of course , tomato paste included.
Cheese, like parmigiano reggiano or pecorino romano, Is salty and strong and you Will cover the taste of seafood. We Say you have to taste the Sea taste into your dish.
Doing it before ensures the salt is fully dissolved and not sticking to the pasta. The important part is to wait until the water is boiling as earlier the salt will sink to the bottom of the pan and stain it.

I always marvel at how starchy your pasta water gets! Is it the brand of pasta you use, or the amount of salt? Or is it just lighting?
The less water you use, the more starchy it will get.
