Great review! I also have the same pit and love it. I got the main chamber fire basket and it opens up so many options for 1 pit. I got rid of my Weber grills because the LSG checked so many boxes.. smoking, grilling, flat top, I reversed sear steaks. Smoke steaks first then I remove the flat top and put steak over fire to finish, game changer 😁
We just got ours 2 weeks ago. I fought with other offsets for years, including a nice 1/4" on, but it had the baffles and it was a constant fight. The Lone Star Grilz 20 x 36 is the easiest to operate offset I've ever tried.
I have the exact same smoker, got last Dec. I live in Canada so shipping and exchange was a little more pricey. But I agree 100% this smoker is a dream! Also I often use as a water smoker by filling chamber in bottle with a couple gallons of water - adds humidity and stabilizes temps better Thanks for the tip on damper on smoke stack, I always keep wide open, but I’ll try halfway to stabilize lower temps Great vid! I got the 20x42...love it I agree I recently figured out the closing the exhaust help my temperature...I was always running hotter than I wanted til I figured that out...and same issue here with gasket...but a fantastic pitt
Nice review of your Lonestar Grillz Offset, Scott. I’ve been using my LSG for 5 ½ years now, and everything you talk about is spot on. I agree the fires/temps are easier to manage on the larger pits. I’ve been smoking small animals a long time (40+yrs) and I find the Lone Star Grillz the easiest pit I have ever used. i Been using an offset for as long as they be around. i won 3 grand championships using an old brinkmann offset . i really can not see spending thousands of dollars on 1 for the back yard. they look nice and all. love the review thou nice job..

I have the same 20x36 here in a neighboring state from you. Having only cooked 2 so far, I am struggling with my briskets being overcooked on the bottom even though I am doing a much better job of maintaining and managing the fire temp than ever before on my old smoker. Been trying to figure out what it is I am doing. Have you seen that as an issue? I run mine fat side up, Point toward the fire box. The fat cap will render nicely, the point will not be overcooked, but the bottom of the flat will be over coocked ruining the tenderness. Still tastes great though.
There are a couple places in Phoenix that sell wood, quite a bit of pecan, mesquite, and oak wood. $100 will get me a decent amount. I have ordered some online, but that get expensive.

I half agree. Length is good. Could go skinnier. Or let the smoker go down to a lower temperature. Then put the wood you have in. It is totally ok to fluctuate the temperature high and low then the attended temperature. An average of heat will work fine. Plus your dry location might add to high temps. The wood might also be a little dry from your dryer location as well, awesome video. I do have the 42" X 20" LSG offset smoker. This is an awesome smoker. Easy to use. I learned to start my heat low and raise the temp. As the cook goes on. Seems to work for me. Getting a good smoke flavor but also rendering the fat with the higher late temperatures. Stay smokey my friend.

I would suggest cooking it fat side down. I have only done a few briskets on the LSG, however all were fat side down with no issues. Good luck! 👌

Ace Hardware or Home Depot has them. They have been a great addition to the outdoor area.
Curious on why you didn’t put the water in the bottom of the main chamber? They advertise for that.
I like the simplicity of having a small water pay by the fire box, blocks some of the heat and super easy to clean.
