This maple cinnamon mandarin porridge is the best breakfast in bed

  • Maple-poached mandarin porridge
    Serves 4 Cook 5 mins Prep 10 mins
    Ingredients
    2 mandarins, zested, segmented
    2 tbs maple syrup
    1 tsp vanilla bean paste
    1/4 tsp ground cinnamon
    2 whole star anise
    Coles Original Porridge, prepared following packet directions, to serve
    Ground cinnamon, extra, to serve
    Maple syrup, extra, to serve
    Method
    1. Place the mandarin in a saucepan over medium heat. Add the maple syrup, vanilla, cinnamon, star anise and 2 tbs water and bring to a simmer. Cook for 5 mins or until mixture thickens slightly.
    2. Spoon mandarin mixture over porridge. Sprinkle with extra ground cinnamon and drizzle with extra maple syrup to serve.
