My advice for someone who is not used to Chinese food is probably to start trying from Cantonese cuisine with the sweet-sour flavor profile or barbeque pork/duck/goose and then advance further. Hope you can find someone who enjoys eating the same Chinese food with you in Melbourne and try all the amazing dishes :p

    After eating the changfen, she exclaimed "Peter!" like Lois Griffin from Family Guy. People who say Cantonese food is bland are probably used to eating at cheap restaurants that use the same marinade for every dish. Or they are people who just want something super spicy. The problem with cuisines that have a super strong sauce is that every food pretty much tastes like the sauce, and then as a result you have a small set of flavors to choose from. Whereas if the cuisine focuses on enhancing the natural flavor of the food, you have a really diverse and large set of flavors to choose from.

    Totally agree with Peter. Cantonese food is not bland. It is not over loaded with a lot spicy or sour flavors so it will not cover the natural flavors of the ingredients and it has wok flavor.

    And thank you Peter for your simple, understandable explanation of warming & cooling foods! I’d made some spice cookies over last winter..getting ready to start making them again. I make things for my neighbors, grocery and pharmacy delivery guys. I should add, up here in the northern Poconos, we also have very few REAL Asian restaurants. The one “Chinese” restaurant in town is owned by a Vietnamese family that has been here as long as my sis..the early 70’s. No offense to them, but their food tastes more like very commercial, prepared, generic Asian rather than Chinese or even Vietnamese. They also don’t speak either language as my sis and I found out. When my eldest daughter and I went there when she was here, while eating, she asked if we could just come home and make some “Khuong’s Soup” (my sister’s Vietnamese name) “and that Chinese sausage rice thing you make”. Yea, it was that disappointing, unfortunately. The place is almost always empty, even during tourist season. I think our city visitors are just spoiled by all the authentic Asian restaurants in NYC. In fact my daughter said I could probably get rich opening my own Asian/Indian restaurant here..a BIT too old for that..and moving soon, hopefully!
    Anyways, back to warm & cool..in the summer, I was making mango lassi’s, dairy free with coconut milk. I’ve tried to explain the warm & cool concepts because I also make different teas, depending on the weather and the person. For example, when my neighbor is having anxiety attacks, she’ll sometimes come over for my Goji/jujube + chamomile/skullcap/Anjelica root, ginger, etc that she insists works better than her medication.

    • @peterzhou372
      @peterzhou372 2 ปีที่แล้ว +1

      Hi! The combination you're talking about is pretty much something you consume when you want to balance the warm & cool (or I should add another two categories, heat and cold) food in general that you've consumed earlier. Jujube and goji berries are warm, but not overly warm which can be translate to heat, and it works especially well on girls cuz these concept is also tied with yin and yang and apparently, girls are represented by yin and would be better to have some warming food to keep the yin & yang or warm & cool balance in their body at the balanced level. Mango, pineapple and litchi, these kinda tropical fruits are heating and should be consumed with a reasonable amount. Also note that you should combat the heating effect in your body by cooling food, not cold food, and combat the cold effect in your body by warming food, not heating food. It's just like when you want to put out a fire, do you wanna use water or ice, and when you're freezing and want to warm up, you won't just light yourself up or put your hands in boiling water 😂😂😂

    Hi Amy. Great seeing you in Canton. Btw the mung bean or red bean porridge is often served after Chinese banquets. Is a popular Chinese after-dinner dessert.
    Cooling or warming, aggravating or causing blisters, pimples vs soothing down or numbing, hence warm water. There's a mid point too,. Balance.

    If I'm not mistaken, another way of understanding the cool, and hot thinrg, is that cooling also has like cleansing properties, whereas hot foods don't.
    For example, cooling foods help cleanse the body of toxins, and acne, etc..
    Whereas hot foods can contribute to more blockages, and stuff like that.
    Hot foods are described to have "Flame" properties, or "Huo qi".
    Cooler foods are "Qin huo".
    I think qin, here means "cleansing".
    I think it could also mean "lessens".
    So one category helps cleanse the body of the heat, or lessens the heat, or "fire/flame" property in the body; the other causes the accumulation of the "Huo qi".
    But I could be mistaken, bc I don't read chinese, and I also don't study TCM.

    • @whatnani7372
      @whatnani7372 2 ปีที่แล้ว

      For example, hot foods can contribute to more acne, or nosebleeds, canker sores, etc..
      Huo qi, and I may be wrong, may also be related to things, such as hormonal fluctuatioms, stress, irritability, etc..
      So foods that (help) cleanse the flame properties within the body, by logic, should also help to regulate hormones, and stabilize things.
      I could be wrong, though.
      For example, some foods, or substances, are known as "adaptogenic".
      For example, ashwagandha, or BPC-157, are known to be "adaptogenic" substances, that help balance certain hormones, etc., in the body, such as balancing testosterone, if it's too low, etc..

    • @peterzhou372

      Not actually. Even though these are not reused, the issue is opening up a coconut neatly like this probably cost more time and effort than just simple washing dishes.
