Looks great! Simple is always best when it comes to Trout. One tip from an oldtimer fish slayer: Once the Trout is done simply lift the tail an inch and using a fork, gently separate the flesh underneath from the little tail bones as you pull up on the tail. All the bones will release cleanly then flip it over and repeat. You'll end up with two perfectly intact fillets. For those seriously disturbed folks who don't like the crispy skin, it can easily be removed the same way.
