I did not shop this week either. I used vegetables from the garden and fridge, and some steaks from the freezer. From that I cooked up 5 lunches for work. Tomorrow night I will try and cook to stock the freezer with a few meals.
Fried rice looks good, although we just can't do tofu in our house as one of my son's is allergic to soy!! And that goes for soy sauce to soy protein to soy flour etc. So we do do fried rice, but add soy sauce individually, and have to wash all plates and cutlery separately, then again to remove traces from the sink etc. I wish I could go a week without shopping, but with 4 kids it's impossible lol, but I do have a strict budget and often only spend approx $150-$160 a week. I don't do Costco because it's often just wasted calorie snacks, but I do have a good butcher and Fruit and Veg man, then top up wherever is cheaper and often in bulk for pantry goods. I think your channel is inspiring, even to me with kids!!
I look forward to trying the oven roasted tofu. Like you I have tried tofu and disliked it, but will give this ago. I enjoy your weekly simple meals etc., very helpful for me, living alone and in my seventies.
