Do you rewarm the refrigerated noodles before adding the fried chicken and zucchini? I think the noodles would be cold without adding them to the wok to warm them before plating.

Possibly too much water with your chicken, as hot oil and water don't mix, causing popping. He might have patted the chicken dry beforehand.
