There are a few things you can do to get yourself out of irons. As you said, you can steer as you boat drifts backwards. You can also pull the jib to the windward side, which will bring your nose round quickly. The same can be done with the mainsail, but this is probably more difficult and less effective.
I love your videos - I have a little 15' Oughtred double ender, but am thinking about getting a Drascombe Lugger one day. Keep the videos coming!

    Amazing! Bare feet in November!

LOl, that's why I always wait until the very last possible minute before winterizing the outboard and tarping the boat - my SOP is to haul the big boat and put her under wraps by early October, so that the little fleet is ready to capitalize on any decent weather we might get in the Fall.

Could you make a video about how your bowsprit is set up please? The looks like she shifts well. :)

Sure, once I get back on the water I'll do a full rigging vid.

Wish drascombes were still imported into the U.S.

They are beautiful. Bought mine off an old friend who ordered her new in 1971, delivered to the Port of Montreal. He had her his entire sailing career and I bought her off him four years ago, as he is now in poor health. He and I crossed Lake Ontario to Main Duck Island in her fifteen years ago. She is an amazingly capable and comfortable boat.

So is it in The US or Canada?
