    Two weeks ago I made Cottage Pie with hamburger and extra veggies. It made 5 portions. This week I saw an ad for a local restaurant and one offering is Cottage Pie same ingredients. $16/ serving ! ! It did not cost me anything g close to $16 to make an entire Cottage Pie

    That’s how I make my meatloaf but I also add an onion soup mix packet. So good!

    Loved all your recipes have made the burrito casserole my family loves it. For the meatloaf when short on time put your meat in muffin tins and make mini meatloaves they are done in 15 minutes. Will need to try your taco bake.😋

    I never thought to add stuffing mix to meatloaf. I usually use oatmeal. I'll have to try it with stuffing sometime. I bet it adds tremendously to the flavor! Great ideas in this video!

      My mom always liked instant stuffing mix for meatloaf. It was extra good because it already had seasoning in it, too.

      I have use Turkey stuffing with ground Turkey to make meat balls (or meatloaf) . Make gravy
      and it's like Thanksgiving !

    I do a version of the burrito casserole using canned chili instead of enchilada sauce. So good & very filling!

      I cannot use red enchilada sauce because of an ulcer, so i use mild green enchilada sauce. Very good and easy on the tummy.​@SelenaJane35

    If you add a dash of Worcestershire sauce to the catch-up and brown sugar it brings it up one notch better or maybe two notches😂

    I just dumped my burritos and enchilada sauce into a dish and stuck it in the oven after a long morning of homeschool, answering client emails, and then trying to set the house to right before the husband gets home.     Definitely trying all these. Ive broken my femur ( do not recommend) and while im regaining my mobility, im still limited. When hubs is home ( trucker) i still want to cook for him ( otherwise staying with parents) i can do most of these and have most of ingredients in my pantry and freezer

    My go to is sweet and sour chicken. Cook some rice, chicken strips or nuggets, stream a bag of your choice of veggies, when it gets done add all together after cut chicken and veggies in smaller pieces - add Hoison sauce, soy sauce, and orange marinade and u have sweet and sour chicken.

    Great recipes. We make a simple recipe in our family. You brown hamburger meat and drain. Add salsa and couple cups of rice. We sometimes add beans and corn also have left meat out and add extra beans. My group loves to pour over cornbread. I know what I am cooking this week. Have a blessed day.

    Great job as always Brooke! Quick meatloaf trick.if you make a trench around you meatloaf in the pan it gives the extra grease a place to go away from your meal. Also if you are on a low carb diet you can use crushed pork rinds in the place of the bread crumbs or stuffing.

    I do a version of the meatloaf but I use ground turkey and add mustard powder or cranberry sauce to the topper.

    These all look great! I bought several bags of Aldi's cornbread stuffing mix and some Pepprigde Farms seasoned stuffing mix for $0.79 and $0.69 when it was marked down after the holidays. I grind it to use as seasoned bread crumbs. I just keep the unopened bags in 5 gallon buckets with lids and the ground up stuff in mason jars and refill as needed. It's a lot cheaper than buying seasoned bread crumbs. Great ideas in this video. Thanks!

    My mom used to do the burritos like that with a jar of salsa and they were so good. I’ve tried the dinner you made at the end but I fry the tortilla strips like chips before I add them to the salsa mix, it’s also good with shredded chicken in place of ground beef if you have any left over rotisserie chicken.

    I watch all your $5 dinners. If you switched out the beef for chicken or pork the meatloaf could be one of your $5 dinners! I always use two pieces of bread that I wet under water. Makes the moistest meatloaf.

    I loved all of these recipes! I barely got through the first recipe before I added it to my menu for this week. And then adding stuffing mix to meatloaf is genius. I always have so much of those boxes left over after the holidays and that’s a great way to use them up. That meatloaf is tonight’s dinner. I always love your ideas, it works for me and my family because I don’t follow recipes much either or measure when I’m cooking. Thanks Brooke!

    I have an idea for your challenges you have been doing lately. Besides drawing dollar amount and store. Have another bowl with additives that can be used. Example: vanilla extract, hot sauce, dry onion soup mix, velveeta cheese pouch, roasted red peppers (at Dollar Tree). This might highlight how a little extra can elevate meals

    Have you ever tried your meatloaf like you make it, but omit the ketchup and brown sugar? I make it that way and add some bell pepper and onion that I blitz in the food processor until it is almost liquified, bake and serve it with brown gravy. (I did the bell pepper and onion that way because my son doesn't like big chunks of veggies in the meatloaf, plus it adds more moisture to the meat.)

    On your struggle meals here was ours.
    Carrot sticks sanwich with mayo.
    Tomato sandwich with mayo
    Radish sandwich with mayo
    We all had fruit trees so we would go to each other's house and collect the ripe fruit we chose for the day.
    Apples, cherries, pears, peaches, strawberries, black berries, raspberries, mulberries
    We had peanut butter and Mulberry sandwiches or blackberry sandwich
    We ate alot out of the garden.
    Green beans and plastic cheese microwaved
    Puree baked beans with Tortilla chips and plastic cheese nachos microwaved
    Macaroni and cut up cooked garden tomatoes and bell peppers and onions.
    Bake sweetened condensed milk on 200 degrees Fahrenheit unopened for 6 to 8 hous in the oven and pour over cut up apples, add Chopped nuts if you have them
    We loved peanuts in a pepsi bottle. We ate and drank pure deliciousness
    Rhubarb dunked in cool aid with a lot of sugar
    Popcorn and apples
    Popcorn and cheese
    Popcorn drizzled with heated up vanilla or chocolate frosting.
    Oatmeal with a teaspoon of peanut butter and maple syrup with cinnamon and sugar and butter toast.
    Scrambled eggs with Peas and tomatoes and cheese
    Would love for you to try my child hood favorites

    You have inspired me to slice lavash and try making some faux pasta in a dish like the last dish with the cut up tortillas. I am low carb because of alarmingly high cholesterol numbers and really just trying to cut back. I love your improvising style: use what you have! Thank you so much for everything you do

    Loved this video. Quick simple food is so nice to have on hand. I don’t care for enchilada sauce, especially the red sauce. One of you Video Queens, it could have been you, Brooke, taught me to use thinned out refried beans instead of enchilada sauce. Delicious. For a quick meatloaf, I form mine into a ring and cook on a cookie rack with pan underneath to catch the grease. Throw in some potatoes to bake. Easy peasy. Just back from visiting my kids and grandkids in Portland, OR, for 3 weeks. Cooked all their favorite foods. So much fun. Debi in Vicksburg, MS. 🥰🥰
