    Very informative! Thank you for the recipe. I can finally make this at home instead of buying it at the Chinese restaurant. I love pea shoots, I didn’t know it has lots of nutritional value. I’m going to eat this everyday as my vegetable…Thankyou again Erica!

      Yes! the second that I figure out how to cook pea shoot like this, there's no going back! It's sooo easy to make that I feel scammed in the restaurant sometime haha! and this method will come out way better than straight up stir frying, let me know how it goes please! thanks for watching Maria

    Finally found you, this is one awesome recipe. I used to stir fry the pea shoots which came out tasting old for some reason. This way of cooking is on point.

      Yeesss!!! I'm so glad this helps, if you follow my step, it should taste amazing. But another reason why pea shoots might taste old could because it's actually old.
      when you're picking your pea shoot at the market, look for the one that have no More then 3 sections, each sections should have 2 leafs, the more sections means more leafs, that might means it's not as tender as you would like it to be.

    Excellent. I was trying to figure out how much of the Peapod stems to include with the leaves. You might explain this in another video. We don’t know what parts of vegetables are actually healthy to eat. Chinese know nutrients better.

      Chinese medicine is very focus on nutrition and what you eat, so we're kind of born with the idea of you are what you eat, which makes us focus (sometimes too much) on our food resources
      so pea shoot is the baby pea plants, at this stage, the whole plant is edible, but I did notice that sometimes the stem is harvested a bit too late and it starts to get fibery, so here's what you can do
      while you're breaking the pea shoots apart, and find it hard to snap apart, that means it has become fibery, so I'll throw that away, it normally happens closer to the root (the opposite side of where the leave is growing) a tender pea shoot should be very easy to snap apart, and it might even release some moisture on the stem if it's super fresh! hope this helps!
