As an Indonesian, I can understand Steven and Brittney's reactions to the oil splashing when they fry the chicken and how they couldn't breathe and cough when your mother cooks sambal in the house. Seeing other people struggle makes me laugh since that is what I used to struggle with every time I returned home.

This is why we're supposed to have 2 kitchens, right? an outdoor one to cook delicious stuff and an unused indoor one just to brag.
@@dapukisgoingon Yup, where I'm from we call them the "clean" kitchen (the indoor one) and the "dirty" kitchen (the outdoor one). The dirty kitchen is the one you use when you are cooking proper meals. Especially in large quantities for the entire family. The clean kitchen is mostly used to prepare drink like coffee or tea for guests, and maybe to plate up some snacks as well. This only applies to larger houses though, that actually have the space for both kitchens.
It's awesome to see so much Asian content and to learn about talented Asians from a "mainstream" youtube channel. I feel like this kind of stuff used to be relegated to "minority" channels. I think it's one positive trend that's been happening, and I'm excited to learn more about Asian cultures and food!

I don't know it seems like a very Western perspective there's a lot of "Asian" content on the internet. Sorry to be crass but they're not zoo animals. Asians make up 4 billion out of the 7 billion people on Earth so technically they're the majority and everyone else is a minority

I just realized Indonesian fried chicken is very similar to Nigerian fried chicken. Nigerians also parboil the chicken with a sort of spice blend before frying, and there's no batter or coating.

Yes, Indomie is the number one noodle brand here. And we do have different varieties of Indomie.

My grandma owns a fried chicken restaurant here in indo and I've seen the restaurant crew made the chicken so many times and you guys nailed it ❤️ but honestly it could be yellower, you need to submerge the chicken when you're boiling it to make it yellower, and you also can add coconut milk to make it mellower if you don't like tumeric that much. Other than that you did great 👍

Hi Steven.. I am your fan since the "Worth It" days and it is so great that finally you cook some Indonesian food.
As an Indonesian and a chef for more than a decade I have some tips to par boiled the chicken Indonesian way. First, the yellow paste should be sauteed first until the paste produce a nice smell and turn golden brown. It is necessary to remove the bitterness and strong tangy flavour of tumeric. Then you pour the water and turn the stove low heat and then put the chicken while the water still cool. If you put the chicken on the boiling or hot water, the chicken meat will be tough and dry. Keep the low heat and stiring it periodically until it is really reduced or almost empty. It takes 3 - 4 hours to cook usually but you will left with spices rich tasty Indonesian style chicken. The Indonesian yellow paste usually contain of crush garlic, shallot, galangal, ginger, tumeric, lemon grass, lime leaf. Good luck! 😁
Thanks for the tip, Jerry! No wonder my chicken always become too tough after I fry them-I put the chicken when the water was already boiled. And that's how I stopped making this kind of fried chicken for almost three years 😭
@@YukinaHawmie well,you should try my way of cooking chicken.. it will take a long time but worth to wait of juicy, tender and full of flavour chicken. And the method also worked well to another type of meat like beef or lamb. Good luck!

Everyone coughing up a lung from making the sambal when there’s a perfectly good hood at the back that would prevent at least half of that suffering.
This might be my favorite episode so far! As an Indonesian I'm glad to see Indonesian food in one of my favorite youtube show. And you guys nailed it! Using the indomie spice packet was honestly a smart move.
Also, I didn't realize it's uncommon in other places to eat the chicken cartilage since we do it all the time here 😂

It’s in every Asian culture to eat the cartilage. I’m Chinese and my husbands Cambodian, we both grew up eating the chicken cartilage. Chinese restaurant sells them pan fried. Japanese sells them yakitori. And Korean sells them fried. Literally they are on the menu. Love this episode. Niki is beautiful.

Future tip: You should scrape the cheese into the cheese bowl so the pasta/rice w/e has loose cheese to integrate into the mix more readily as it melts.

It might look simple, but if you pair it with sambal & fresh lalaban (cucumber & lettuce), it will elevate the flavor even more. The thing with Indonesian dish is... It's not really established yet internationally. We have such a rich collection of food and culture and it's kinda sad that the one that truly made it are just Indomie at the moment. Hope Dishes like Soto, Nasi/Mie Goreng, Rendang, Pepes, Bakso, Cilok, Cireng, Mendoan, Tempe, Satay, Martabak, and all the other good stuff can make it just like our pride and joy NIKI!!!!!
Dish Granted needs to spare a few bucks in the budget for a splatter shield... They be living wild with all the fry oil flying.

oh my god everything in this video has quite the indonesian household kitchen cooking vibes from the traditional ingredients and ulekan to the indomie seasoning on random food to the oil splash and extreme sambal coughing although everytime my family cooks with turmeric our fingers will always get a little bit orange yellow

When people mention Indonesian food, most answer would be Indomie, rendang, or nasi goreng. But Indonesian fried chicken actually something that people eat often all over the country. Nice to see it covered here

the frying part is sooo relatable lol everytime my mom asks me to fry the "ungkep chicken" i would wear a raincoat and a helmet😭 meanwhile my mom could just fry it with hands deadass...
I like it better when it's mostly Steven doing the cooking and everyone else is there to support. Like the original seasons.
I can’t say I prefer one over the other, but I am worried that Steven might still be reeling from the first episode with Ronny. His confidence in his cooking seems to have taken a real hit and while I like watching him interact with other cooks, it seems like he’s trying to step back and just be in the advisor role instead of cooking.

I love Nikki! This is such a great episode I love learning about all the cool different foods from different cultures, that fried chicken looks amazing!
Extra tip: boiling the chicken (along with the spices) in coconut water instead of regular water will elevate the flavor on a whole new level. Also, don't be afraid of overcooked it. Our mothers at home usually boil the chicken down for at least half an hour before frying it to golden brown and crispy. For the rest of the chicken, you can store it alongside with the now thicken marinate in closed food containers and put them in the fridge for later frying. In freezer it can store for a month or two (make sure to really freeze it).
But, usually the marinated chicken will never go to the fridge because the family with eat them all within 3 days because it's that good. 😅
I remember my mom used to make this prepared marinated chicken whenever she'd go out of the town for a few days. We only need to fry the chicken for quick meal and serve it with warm rice and sweet soy sauce sambal. Yum!

we have a fast food restaurant called richeese factory here in ID (rip off name, I know) and they basically sell fried chicken with white rice and the chicken is dipped with super spicy. and then, you get to eat it with plenty of cheap cheese sauce (hence, the name richeese). there you go.

I love Steven and Brittney, but as an Indonesian, I'll never forgive them for making a dish combo of salty chicken with even more salty side dish. Just like Niki said, it's the balance we love
A splatter guard can be your best friend in the kitchen! Greatly reduces all the scary splatters from frying or saves your counters from simmering long sauces
I didn't really know much about NIKI but I respect anyone who eats their chicken to the bone, nice and clean!
So I didn’t even know Indonesian fried chicken was a thing and now I’m gunna have to try this 😍 I try to fry chicken but the breading ALWAYS FALLS OFF.
It could be pretty tricky to make.. But, you won't undercook an Indonesian fried chicken. If it is overcooked when frying until golden brown you need to make the temp higher so a lil bit faster browning on the outside. The key is the ungkep marinade you can leave it on the fridge overnight with seasoning. Taste better when fried the next day
you gonna need more water than steven and britney use for braising your chicken, it's make sure your chicken all covered up
would highly recommend!! you can probably find a spice mix at your local Asian Mart :D!! super flavorful it's making me drool just thinking about it haha
