Trying to make edible brick with chicken and vegetables from Delicious in Dungeon

  • Have you ever wandered how brick would taste if you could eat it. Well that is something I wondered after watching the anime Dungeon Meshi (Delicious in Dungeon). And NO this one doesn't taste like dirt. This dish is inspired on the Japanese dished called Oyakodon, with many changes to make it look like the one Senshi made. With this dish you will literally even want to eat the plate. Hope you like this delicious dish as much as I did.
    00:22 - Mashed Potato and egg plant crust (brick)
    04:55- Barley
    05:58- Chicken Sauce
    06:15- Chicken and Vegetables
    07:53- Egg yolk Sauce
    Ingredients
    Mashed Potato and egg plant crust (brick):
    -1 eggplant
    -5 potatoes
    -2 garlic cloves
    -1 tbsp Salt
    -1/2 tbsp black pepper
    -1 egg (only the egg white)
    -1/2 cup of potato starch (you can also use cornstarch)
    Barley:
    Chicken Sauce:
    -1/2 cup water
    -1 tbsp dashi
    -2 tbsp mirin
    -2 tbsp brow sugar
    -3-2 tbsp of cornstarch
    Chicken and Vegetables
    -1 big onion
    -450gr of chicken
    - 1tbsp butter
    -parsley
    -scallions or chives
    Egg yolk Sauce:
    -1 egg yolk
    -1/4 cup of olive oil
    -pinch of salt

    For the egg sauce, it might work to temper the eggs with the broth so it gets thickened but not cook the eggs.

    quite a few "black" pigments are actually a very dark green, purple, or blue, so when you mix it into something that is white, it lightens the hue. you can prevent this in the future by mixing like three drops red to one drop black (which it looks like you did!). sometimes it's nice to look up the pigment used in the food coloring you have. You can make your own black dye by burning bones (search up "ivory black") but idk if it's edible. like probably?
    keep in mind that yellow dyes tend to be way weaker than blue dyes, and red dyes are somewhere in the middle. your method works pretty well but in the future if you want to improve your color matching, do a little research on how painters mix colors and it will make more sense.

      another thing! mandrake is a real thing! it's in the same family as tomatoes, eggplants, and potatoes. I have no idea if it's easy for you to get it or not in your location though and it's probably not similar to ginger. onions are alliums, which are a completely different group of plants, but it looks incredibly delicious so it doesn't matter lol.

    Interesting... Maybe, rye flour and rye malt could be used to color the bricks in light brown?

    Probably, as mandragora looks like big yellow cubes, turnip(the one with yellow insides) or sweet potato could be used here.

      Those are good option to replace the mandragora, and it would combine with the rest of the ingredients, I will try it to see how it goes

    Looks really good, though I would have used boiled liver instead of eggplant for the bricks, it would give a better color without food coloring.
    Honestly it looks real good, not that complex to make and likely would be fun to take pictures to show friends.

      Yeah I wanted it to be something pretty easy to make, but your idea with the liver is something I would have never thought about, is a great idea. Also if you try it sometime I would love to see it

      @@carrot-z I'll be sure to let you know if I try the recipe. I just had the idea because I'm honestly not a fan of eggplants and I happen to like liver pureed and mixed with rice, so let's say things clicked haha.

      @@carrot-z it's just a possible idea, there are more kinds of pâté's than just liver, you can make it with minced meat too, but likely won't have the exact color.
