    I’ve been a carbon steel customer for years. I absolutely love these pans. Having something that has a cooking profile of cast iron with the weight of a stainless pan means I rarely pull anything else out in my kitchen.

      Your stainless pans must be super thick or something, 'cuz my All-Clad pans are nowhere near as heavy as my carbon steels. Typically carbon steel pans are somewhere in between cast iron and stainless, leaning more toward cast iron for quality pans.

    there are only two pans used consistently enough to warrant constant display on my stovetop: the carbon steel griddle and frying pan. these changed the game for me!

    Finally, got a 10" carbon steel pan a few months ago. It has replaced my 10" stainless clad pan for cooking steaks and pork. Slowly moving to cooking fish and poultry in it. Eggs, not so much. No matter what they say. So far the 10" pan is all I'll need at home cooking for two though. Thanks, though to MadeIn, it is a great pan.

    "We decided to rivet ...easier to clean" ...Mmmm, nope. Matfer Bourgeat's spot welded handles are easy to clean ...as there's nothing but a smooth surface, and no rivets for food to build up.

    made in carbon steel pans are used in my kitchen almost daily...if not every day. From eggs in the morning to steaks and fish at night.

    best pan that I own for indoor meats. heats up very quickly. can use in the oven with the broiler no problem. take the time to season yours - i got an unseasoned one so i could do my own - super easy. damn thing is unstoppable.

    I somehow managed to snag one of the Tom pans before they sold out and it lives on our stovetop now. Using it daily and it just keeps getting better! Cannot even imagine going back to my old smithy cast iron at this point.
