I done a electrical maintenance engineering apprenticeship but we didn't have to learn this, in college they say we were meant to learn this in the work place.
Are you doing a degree on electrical engineering or something to have to learn this?

How would you link 2 of these circuits together? so if you had 2 of these in different panels on a line but you want any of the estops on the line to stop everything.

I am not sure with pilz but with schmersall you could wire all e-stop pushbuttons in series to one safety relay and still meet all safety requirements. The estop pushbuttons had to be schmersall as well.

Why 13(23) and 14(24) ? Can you use 23 and 24 terminals of the Safety relay to also turn on the contactor ? Why both options 13+14 and 23+24

You can use either 13-14 or 23-24.
