Tomato and Goat Cheese Gratin with Crostini. It’s a Family Affair!!!

  • This dish serves four but can easily be doubled to make a large gratin using a 9 1/2 or 10” dish
    Ingredients:
    1 cup prepared tomato sauce
    4 ounces goat cheese or feta
    12 olives, quartered or sliced
    1 teaspoon each of rosemary and oregano, finely chopped
    8 cherry tomatoes, quartered, optional
    2 slices prosciutto, julienne, optional
    Other suggestions:
    Sautéed mushrooms
    Caramelized onions
    Roasted peppers
    Set your oven to broil.
    Place your attend dishes on a sheet pan. Place the sheet pan on the top rack just below the broiler. Royal until the tomato sauce is bubbling, and the cheese is very warm and soft. This should take about 2 to 3 minutes. Be sure to watch it carefully. You can serve this gratin with Crostini.

    Recipe for a simple tomato sauce:
    1/4 cup finely diced onion
    1 large cloves of garlic, minced
    1 small carrot, finely diced
    1/4 teaspoon Sea salt
    One 28 ounce peeled Italian plum tomatoes in their juice, diced or pureed
    1 small bay leaf, 2 sprigs of fresh thyme and parsley - tied with twine
    Heat a tablespoon or so of olive oil to a medium saucepan. Add the onion, carrot and salt and sweat for 5 minutes on low heat until vegetables are very soft but not browned. Add the garlic and continue to cook for a minute or so. Add the tomatoes and herb bundle and simmer uncovered for about 15-20 minutes.
    Taste for seasonings.
