Pork Ragu

- This Ragu is absolutely delicious. It’s perfect served with pappardelle or Fettuccine that is made with eggs. Serving it with Fresh Ricotta Cheese makes it even extra special. It’s a great dish to make for Sunday Supper and also wonderful for entertaining. Enjoy!
Ingredients:
2-3 lb. Boneless Pork Shoulder
1 large onion - finely diced
2 carrots - diced
2 stalks of celery - diced
4-6 cloves of garlic - minced
1 cup dry red wine
2 cups chicken stock
2 28 ounce whole peeled tomatoes - pulsed
2 bay leaves
1 sprig Fresh Rosemary - chopped
1 tbsp. Fresh sage - chopped
1 lb. Sweet or Hot Italian Sausage
1 cup Ricotta Cheese
2 tbsp. Heavy Cream
2 tbsp. Parmesan cheese
1 tbsp. Fresh basil
1 tbsp. Fresh parsley
