      Dusting of the fillets great tip it is a must I reckon I did it the first time and forgot there is a genuine difference it seems to hold on better

    Hello Roger, thank you so much for posting these videos. My family and I are really enjoying watching them and have benefitted from from the knowledge you generously share. You have inspired us to go out fishing more often together as a family.
    In fact, we recently came home with a catch of flathead and Australian Salmon (correctly dispatched and bled). Your beer batter recipe is simple and the result was absolutely delicious. To my surprise, the Australian Salmon was excellent, and 2 of my 3 kids actually preferred it to the flathead. How good is that? 👍🏼😃👍🏼

    Roger if you can chill the batter in the fridge before using the batter seals immediately and no oil will penetrate the batter. Place chilled and unchilled batter fillets on kitchen paper after cooking and you will be amazed at complete lack of oil on the paper from chilled batter fillets. Taste better

      If you have a ready access to ice, maybe a home ice-maker, you can go the “extra yard” and sit the batter bowel inside a larger bowel that is filled with ice. Most beer- battered fish served in good restaurants is done this way. Another trade secret, they don’t use beer in beer-battered fish, they use icy cold soda water. It makes for a far better batter.

    Fantastic recipe mate I use exactly the same but I add a little rice flour RICE FLOUR not starch the rice flour gives a thicker batter like the old British fish and chips but I prefer your recipe as it’s light and makes the flavour of tje fish shine thanks mate

    A suggestion. Instead of drying the fish after rinsing, try seasoning the fish directly, then dredging it in flour and letting it sit up for 10 minutes.. The flour and water will make for a tacky surface which makes the batter stick even better to the fish.
    And a tip someone gave me on deep frying a couple of years ago. You can deep fry damn near ANYTHING in a wok! They make such great vessels for deep frying! I used to have a 'deep fryer' machine. I threw that grody sucker away!

    Most of the time I do catch and release, but I just tried this simple recipe on some mangrove snapper and it was awesome, no big mess afterwards, just a full belly, ty very much Roger.

    Used this recipe after catching a nice flathead using yabbies and it's awesomely easy and crunch it does . Thanks for the tips on yabby pumping , putting yabby on the hook was easy after your tips and a bit of practice , and a nice day in hat head creek resulted in a 50 cm male flathead , love your work

    I find that if you kill them quickly, bleed and ice them, and cut out the bulk of the dark red meat when filleting, Australian Salmon are magnificent eating when beer battered. And i'm not a fan of fish in general. I dont understand why a lot of fishos turn their noses up at them. I dont suppose it matters too much but i use black beer (tooheys old) in my beer batter.     Lovely I'm sure this could be used on chips as well. I remember the Norman Hotel in Brisbane using a beer batter like this it was perfect. Lovely!.

      Coco, Olive oil is fine.

      olive oil has a way lower smoking point, so is therefore not ideal to fry with (in general...). It will work but you won't get a lovely crispy fry

      @@bradcolley2391 Plus, you will be adding the olive flavor to the fish and that can be a bit off putting.
      Try peanut oil instead for shallow frying or a 3:1 ratio, vegetable oil to peanut oil, for deep frying.

    I found your channel the other day and really like how you make everything so simple and straight forward. If you would like to really make the fish taste extra special try cooking them in coconut oil rather than vegetable oil (Some "vegetable" oils are not good for you).

      Try Mineral Water or Soda Water. Just need the bubbles for aeration.

    Roger, first time seeing your channel. So good to get a quick and easy recipe. I’m 72 now, and live in Oregon USA. I am a national fly casting champion. I went to Australia in the 1980s, and toured from Sydney north while fishing from the beach. I used a two handed fly rod which I could cast 300 ft. I had a great time and so enjoyed waking up to flocks of parrots and all the wonderful wildlife. My favorite bird was the kookaburra. What style fishing do you do from the beach?       @@RogerOsborneFishing none. It got to be catch and release except for salt water like dorado. I eventually said why am I bothering these fish if I’m releasing them. It just gives them stress. I started using a fly with no hook and when one took the fly I counted that as a catch. I loved to cast and watch the line roll.

    Very good technique and good video.
    Even easier... I mix up a batch( maybe 5 cups) of preseasoned flour and keep it in the freezer. It's good for fish, chicken gravies etc. Tip... taste the flour mix before using it and adjust the seasoning. I shake the fish in a plastic bag (no dishes to wash). Why not use a SEASONED flour mixture to dry your fillets ? Plain flour has no taste.

      Hi Gene, good point. I probably shallow fry more than I deep fry. Deep frying is more work.

    put the flour to dust the fish in a plastic bag , salt and pepper for seasoning and throw the fillets into bag , remove ,dust off and dip in batter and cook
