    I made a beer batter just like that once but I didn't make fried fish, I made onion rings with it. After I fried them I sprinkled garlic powder & sea salt on them and man, were they good! I'll have to try some fish & chips soon, looks uber yummy!

    Maris Piper potatoes are the best NOT Yukon Gold Gordon You need to learn to cook proper fish & chips also goedon you used the wrong peas mushy peas are made form Morrowfat peas which taest far better Thats not a Rolls Royce dish more like a old banger falling apart

    Look too crunchy like a lot of the Australian fish shops. Back In New Zealand most shops have good softer batter. Crunchy usually oily too

    I'm a great fan of Gordon. But, why are you calling the chips 'fries' !!! They're chips... Fish and Chips!! And then you add parsley and paprika to the chips? Tarter sauce? Capers? Lemon? Nooo, salt & vinegar with the chips. Pickled onions and wallies/gherkins is the traditional serving. And mushy peas come from marrowfat peas, not garden peas. Yes, Beer Batter Fish and Chips is a Classic British & complete traditional English meal. But what you did to it wasn't. Sorry mate you have sold your soul

    The written, or printed out recipe doesn't include the 2 eggs in the wet batter mix ... almost implies you dredge the fish in dry flour, then beaten eggs, and then into the wet batter ...

    Everything was wonderful till you brought out the tartar sauce!! Where is the Malt Vinegar!! For me it was always the fish and chips, wrapped in newspaper and sprinkled with malt vinegar, made and sold from the stand on the corner, just before going into the cinema to watch a good movie!! Of course that was back in the 1950's, and maybe tastes have changed over there... but my memories are still making my mouth water.... and I'm headed out to do some grocery shopping!!

    Just leeve the fish in the fridge Unwrapped overnight it will dry out NO NEED To Use SAlt to Get Moisture Out of it , Which Takes TIME that you doidnt Do just put salt on and wipe off No More Moisture Wrong that dont WORK GRRR

    I like salt and vinegar (preferably pickled onion vinegar, I save it in a separate shaker) on my chips, not parsley and paprika. and Bachelors mushy peas are the best! no faffing about with frozen peas onions and garlic and mint! I am not a big fan of Tartar sauce and much prefer Tomato Ketchup or Curry sauce on the side. I'd skip the lemon completely. This is a classic example of how to Fxxx around with a classic British dish. Marco Pierre White will show you how to cook fish and chips without the bullshit on TH-cam. Easy and simple.

    Some of these cooks are so delusiuonal, how can salt draw out moisture if you pour in on in >FLAKES< and wipe it of immediately ...... just a small thing like that......jeeez .... they are just making anothr video ..... that is all they are doing. Just another video. Ok ok I am technician half baked engineer still wonders of the validity of the advice given here..... sigh.
    ( edit: I like to TRY cook indian food and if they KNOW the dish require certain amount of salt then they pour it on IMMEDIATELY when they are frying the onions cause make them wittle and speed up the entire process; BUT BUT BUT it does not take 5 seconds as in the video above, it just shorten the time with 5 minutes. You still have to cook the onions )

    What a beautiful video. I had fish finger sandwich this evening, one of the few foods that doesn’t upset my acid reflux. So I’m going to stick with fish, but home made next time!

    Great instructions right upto the point he cooks the fish and chips in oil. Proper fish and chips are cooked in lard or beef dripping. That way you dont get the rancid veg oil smell and taste.

    Hmmmmm...blanching the chips at a way too high temp. Should be blanched at 250, then taken out and rest for at least 30 minutes, then cook at 350 to 370 degrees.

    Your fish n chips served in your london restaurant was lousy. Even the traditional prawn salad has to be returned due to salad turning yellowish brown. Your beef wellington was not good too.     Fish, chips and mushy peas comes from the chippy, dont be poncing around with it. Obviously salt and vinegar, open or wrapped the only other decision to be made.

    The link to the batter recipe lists 1 tsp baking powder in the list of ingredients. But the directions say "Now mix the rice flour, the flour, the salt, the baking soda, and the sugar in a med-sized bowl. after, add in the soda water and the larger beer." is it baking powder or baking soda that is required? Also, in the video he says the secret is the flour eggs and beer. I don't see eggs in the written recipe.

      Baking powder mate. Only use baking soda when a recipe has something acidic, like lemon juice/zest. Otherwise it doesn’t react. Baking powder will just react with heat.
      I think the eggs was just a mix up; they’re a common, but in this circumstance unneeded item for frying.

    Gordon, I just watched two of your videos on cooking Fish 'N Chips. One had you doing it in 10 minutes and called for egg whites and regular flour as well as other ingredients but the other videos had you using a completely different method with 00 Flour and Rice Flour as well as adding more ingredients than the first recipe. Which is best?

    North Atlantic Cod is recovering from centuries of overfishing do not be so quick to call it sustainable. You are right about it being best for fish and chips. That was it downfall in the past. You English ate Cape Cod and the Grand Banks. The cod were so numerous when europeans first arrived they described them as so thick you could walk on them

    Just tied it and it was a big hit but my batter came out super think. Next time can I add more beer or soda water to thin it out?
