    I like your version of this, Elly😊 Eggs have never agreed with me, and I only used them as a binder for cooking. I am now using a lot of ground flax as a substitute. When I bake, I also prefer using spritzes of water instead of flour on my hands and the counter. It's much neater 😉

      Ah thanks Dale! Glad you enjoyed it, I hope you like them! They are my healthy version, but you could add butter to make them richer and more delicate if you like. I've been eating these for breakfast! They're not bad warmed up, even after a few days :)

    They look really lovely, Elly, and I bet they taste scrumptious. I couldn't help but notice your recipe book. It looks just like my old soap and lotion recipe books; lots of ingredients listed, some method notes, occasional crossouts, and footnotes from experimenting ☺️

    These look so beautiful! I've seen some recipes recommend soaking the dried fruit before adding them to avoid them absorbing too much moisture from the dough - would you recommend doing this?

      Thank you! Yes, you can do that, but I didn't do it for this version. The first batch I made I soaked the fruit for 10 minutes in boiling water. You can do that, or you can add some extra liquid to the dough to compensate :)

    Vegan freshly milled flour buns are exactly the recipe I needed!! Any chance you have a conversion for how I could do them without any starter? I don't have one yet.

      Oh wonderful! That's so great to hear Sarah. Yes, you could do these with 1/4 tsp active dried yeast, or up to 1/2 tsp yeast if you want it all to move faster. I would just mix the yeast in dry with the flours, that will work well. Good luck!

      I sold mine as it was taking up too much space. But any model would be fine I think.

      Well, I did make them Elly and they were delicious even though my crosses were very messy. I think the hole in my bag was a bit big and my flour water mixture too runny. I’ll know for next year. In the meantime I’ll be making them more regularly without the crosses. Thanks so much

      You can pretty much substitute sourdough for quarter teaspoon of yeast in any recipe. Very easy :)

    Would this work as a dinner roll if I omit the spices?

      Ooh, good question Sarah. I'd probably use a different recipe, but yes, technically it would work. When I make rolls I usually just make a regular bread dough with milk instead of water and bake it into rolls. Any wheat/spelt sourdough would work :)

    Hi Elly - just curious how long it took for the rolls to double in size. The first proof was 5 hours and the 2nd was how long? Thank you!

      Hi Katelyn, it really depends on the weather, and I don't remember exactly, but probably around 90 minutes in cool weather, and 30-60 minutes in hot weather? There's never any set times with sourdough, it's so dependent on temperature!

      I understand that. Rolls are a bit more forgiving though! I was taught years ago that you can always take rolls to a fuller proof - they are smaller so have less chance of collapsing :)

      If it's 100% whole grain and not sifted (stoneground), use exactly the same amount :)

    The minute you heat flaxseed they start to oxidation.....my grandma from Tigray Ethiopia told me this and the western science believe too. Love you innovation tho

      Thanks for that. I guess the entire dough ingredients are oxidised to some extent. It's still a lovely healthy recipe :)

    I did use an ordinary egg and milk instead of yogurt and the dough was a bit sticky but they melted in my mouth

      Hi Diane, yes I'll be doing a video on that soon. I just use store bought soy milk (or other plant milk) with a non-dairy yoghurt starter culture I buy from Green Living Australia. I'll do some more research on resources for this and share soon :)
